Basquia Bakery @ Jagalchi Market – A Beautiful Lie in Bun Form

Basquia Bakery, nestled inside the glitzy new Jagalchi Market, has been buzzing with locals, tourists, and feral tong-less bread grabbers alike. The spotlight? The infamous 술빵 (sulpang) aka makgeolli bread, aka fermented rice wine buns, aka soft lil’ lies wrapped in a beautiful steamed sponge.
Now listen. I’m a sucker for hometown nostalgia, so when I heard these babies were made with makgeolli, I was emotionally compromised. They looked like edible clouds: perfectly pillowy, pastel-hued, and neatly arranged like a K-drama prop bakery. I thought I was about to eat a fermented dream.
Wrong.
Let’s talk about flavor or lack thereof. These buns promised a “slightly sweet, tangy, fermented” profile. What I got was the boba tea of bread: chewy, cute, and entirely empty inside (emotionally and otherwise).
I bought a six-pack sampler like a fool thinking each color might be a different flavor. Ha. Silly me. They all tasted like vaguely sweet steamed nothing. The cream inside? Whisper-light and about as flavorful as exhaled whipped cream. If air had a texture, this would be it.
To be fair, the texture was satisfyingly bouncy. But if I wanted to chew on a neutral sponge, I could’ve done that for free in the bath.
Look, if you want a pretty Instagram photo or enjoy the aesthetic thrill of a flavorless science experiment, go for it. But if you're spending your money hoping for a punch of fermented nostalgia? Prepare to taste disappointment in adorable pastel form.

Read moreMy first time here, the entrance was a little annoying. They have a door on the outside, but you can't go in that way. It doesn't say you can't go in that way either. From inside the market you can go in but you can't bring in the cart which is annoying if you just finished shopping. I didn't want to bring the stuff in the car and go back in. After kind of pushing my way through, which everyone else was doing, why I'm not sure. It was rude, like we're all going in for the same thing but whatever. There wasn't a huge selection, but it was enough to keep everyone happy. They had grab and go pastries and cake slices that you lined up for, and they also had coffees and teas. This is a list of the items I tried:
Bake plain sulpang - My cousin told me that this was so good and tasted like a baked puto. When I tried it, it was ok. Nothing special. It was like the top of a sourdough bread and nothing great on the inside.
Strawberry sulpang - This had strawberry cream on the inside and a strawberry on top. This was my favorite. It was lightly sweet and didn't taste like artificial strawberries.
Ganschu chocolate cake - light and not too sweet. I was torn between this and mango.
Mango slice - Mango is always my go-to, and this wasn't bad. It was light
Carrot cake - This I do not recommend. The cake part was so dry it was inedible.
