Stopped by when I saw a place I didn't recognize while driving east Colfax. From what I can tell, it's the new fourth location of a Denver based chain.

I went with a birria burrito, and was offered chips/salsa with it . I got a massive serving of a chunky tomato forward salsa, which offered the occasional spicy bite whenever I caught a jalapeno seed. Chips were house fried tortillas cut into eighths with a light salting.

I ordered my burrito Christmas (smothered, half-red half-green) to try both of their chilis. I preferred the red chili over the tomato'd green, but both were decent. Neither was particularly spicy, unfortunately, registering at a mild-medium by my taste. The burrito didn't look huge, but I still left feeling sated, so it might just be that I'm getting used to massive burritos.

Decor was a fairly standard industrial chic, with a big bunch of faux grass with a neon light on one wall. Service was very friendly, and contributed to my positive experience.

All in all, I'm glad I stopped by. I'll need to come back at least once so I can try their take on...

As a born and raised Denverite I enjoy my Green Chili. Frequenting places like Chubbys and Mexico City and El Toro. As I have relocated to the southern suburbs I have been disappointed by the drive I make to those places we hold near and dear due to quality issues.

I came to Chili Shack with an open mind hoping for the best as this Colfax location (tough area to park but I was able to find parking straight away) is much closer to me. I was not disappointed. The food was fresh and hot and quickly brought to the table.

I ordered the chili shack plate with 3 grilled tacos and a side of chili fries. It was a massive amount of food. I was thrilled to bite into my taco and immediately found those familiar flavors I have been missing. Perfectly grilled, perfect cheese melt with tender steak. The green chile has large chunks of chile as does the salsa which is delicious as well. All of the and a pina fresca was just about $20. They also served a fresh hot tortilla chip basket and a large cup of their green chile salsa.

So a friend introduced me to this place a few days ago. I order on the phone and the employee who answered the phone was knowledgeable on the items. Knew exactly how big the portions were to get an idea on what would feed what and how many it would feed. When I got there to the restaurant staff was also friendly courtesy, respectful and helpful. Atmosphere was hip and music was good not too crowded and a lot of seating. Reasonable prices, on menu items I had the small fries with chicharrones smothered they were definitely on point. Not too spicy for me but my friend ordered the smothered asada fries with 3 deep fried asada tacos which he absolutely loved and orders all the time. The guacamole tostada was delicious and flavorful. Ultimately it’s another fabulous place to eat at especially for quick tasteful and on point Mexican Restaurant. Definitely going to go back o my next time I will bring my kiddos they will love it. You should open a place...

It was overly cheesy, and I’ve had better from other Mexican restaurants, so there’s definitely room for improvement. However, I really enjoyed the guacamole and hot sauces, which were both fresh and flavorful. The complimentary chips and salsa were a nice touch too. Overall, a good experience, but the quesadillas could use some refinement.
