Edited on 4/15/25: I just wanted to follow up here with an edit to my original review. In addition to the owners gracious response to this review, the manager of the location was also extremely gracious and seemed genuinely interested in hearing my feedback. As well, when I went in today the barista apologized again and gave me some free drink cards. I'm changing my review to 5 stars because I truly love their coffee and I'm extremely impressed with how they handled my feedback! It seems like they really care a lot about the customer experience and I appreciate how much they wanted to make this right. I will gladly keep supporting corvus and coming here for both their in cafe drinks and their coffee beans!
I love the coffee at Corvus. I have been coming here for years, I buy their beans for my at home espresso machine and I also will sometimes stop in for a latte. Over the last few years, the service has really gone down hill. There was a time I was stopping in almost every morning for a latte. 90 percent of the time I use the order ahead function, and I really appreciate that they offer that service. It used to be that I would walk in 7-10 minutes after ordering and the drink would be at the bar. Over the last year or two, the time it takes them to get the order ahead orders out has slowly been increasing. I never really felt too annoyed about it, I get it especially when they are busy.
But this morning felt particularly egregious. I ordered a single latte ahead and it took me ten minutes to get there. When I got there, there were two people working and not many people there waiting and no one in line. I waited an additional ten minutes in the store, for a total of twenty minutes for a single latte. During this time, another employee began their shift for a total of three people behind the bar. The employee who had just walked in was clearly trying to get things moving but the main barista did not seem to care how delayed the orders were and was conversing and taking her time making the drinks. I never complain about service, and I tend to be incredibly lenient because I understand that it is incredibly taxing and difficult to work in the service industry. But I feel compelled to write this review because I feel the service has really gone downhill. Twenty minutes for an order ahead latte is beyond the scope of what is reasonable. If it had been packed in there I would have understood but it just wasn't.
Additionally, they used to have much better service in the sense that if they made a mistake with your drink or you had to wait a very long time, they would give a free drink card and their apologies. There was not even an acknowledgment this morning that it took them 20 minutes to make my latte. Additionally, the order was wrong, adding to my frustration. The temperature of the water used to extract from grounds the oils that give coffee its flavor.
The size and consistency of the individual granules that compose your grounds (the reason a burr grinder, champion of mechanized consistency, can transform your morning routine if you're using a bladed grinder).
The ratio of water to grounds (23 grams of coffee to 320 grams of water is my sweet spot).
Too often overlooked (because it's so hard to come by) is the quality and freshness of the beans themselves and, if you live in Denver, you honestly can't do better than Sweet Bloom (in Lakewood) or Corvus Coffee on Broadway.
Not only does the roaster deliver on the vaunted tasting notes promised on each bag but you can find, as I did, coffee roasted and bagged within days (or in my case one day) of its counter space occupancy.
And that matters. A lot. Optimally you'll want your fresh coffee to breathe a few days after roasting before using but, ideally, you'll use and consume your bag within two weeks of roast. Corvus' committment to excellence and freshness makes that possible, a rare achievement in the Denver area in my experience. No more flipping of bags like a madman for 10 minutes looking for a single bag that hasn't sat an age on a shelf. The roast date is out front, like a badge of honor.
Finally a word should be said for the thoughtful, knowledgeable and generous batistas who prepared a pourover for me -- without rushing, proud of their craft and knowledge but also humble and kind. Kindness is a quality in shirt supply these days and I honor it when I find it. In a service industry focused, however subtly, on customer turnover, the overall sentiment conveyed by my batista was "I took the time to make this for you right. You matter. Our conversation matters. I'm glad you came in. Enjoy." That's authentic committment to customer service. It makes an impression especially considering how rare it is.

Read moreOutstanding coffee shop. Corvus Coffee Roasters showed up on every list of recommended cafes in Denver, and I can absolutely see why. They are remarkably dedicated to the art of good coffee, with a variety of different single origin beans expertly prepared as either pourover or espresso. The team is super knowledgeable about each of their beans and can give you recommendations based your preferences, and they even do coffee tastings if you want to try a variety. I decided to get a cup of pourover using their Geisha beans, and it was fantastic; the perfect level of brightness, with great notes of fruit and caramel. I’m sure the staff could give you a far more robust description, but thought it was fantastic. They also have plenty of tasty pastries if you’re looking for something to pair with your coffee; I got their berry and goat cheese galette and am absolutely obsessed. The goat cheese gave the tart just enough tang and funk to keep the tart interesting, and it was a great counterbalance to the sweetness. I loved how creamy the goat cheese was, and the pastry shell was the right mix of flakey, buttery, and crumbly.
The vibes were also delightful, perfect for a casual hang out or for working remotely. There are a ton of outlets available and speedy WiFi, so it was a great spot to hole up with my laptop for a few hours.
