Monolith Brewing — Restaurant in Denver

I think I've tried just about every beer they offer here and I've yet to be disappointed, even with the types I generally dislike (looking at you Rocky Ascent; I generally don't like sours but this has been an exception).

The various IPAs have been amazing, but the Capsaicin Elation has really stood out. Most beers with chilies come off as just some added heat, but this one actually emphasizes the flavor and not just some capsaicin (and it would probably make for an amazing michelada).

The guy gave me 3 inches of head on my cider , I tipped him a dollar on my $8 drink and he refused to top it off. It wasn’t a standard pour as he claimed, I was missing at least an oz if not 1 1/2oz of cider. I’ve bartended in the past, would never refuse to top off a drink for a customer. It’s a 4 start environment, fun for stop in. Maybe the other staff is courteous and know what they’re doing, but not Stephen who I guess is the owner. You’d think being the owner you’d get a top off if requested. I’ve had hundreds of customers ask me for a top off, most of them only missing half inch or full inch, not 3 . I’d always respond with an emphatic “Yes”. Hope it was worth a 1 star review to save a couple...

Beautiful and upscale local brewery. Impeccable design, from the gorgeous light fixtures, to the comfortable furniture, to the green marble bar top! The entire space was thoughtfully crafted with sustainability in mind. Bamboo toilet paper, coasters made from repurposed leather, and spent grain after the brewing process is sent to farmers to use as feed for cattle.

Delicious empanadas from Maria Empanadas. Every beer was unique. My favorite beers were the Coffee Blonde and the Jalapeño Ale.
