Food/Taste/Flavor: 5/5 large combo pho Noodles texture is good though it doesn’t have as much of a bite as I am used to (they’re softer). Some slices of beef got cooked together and were stuck together so if you don’t peel them off each other, it gets very chewy. I put bean sprouts under the noodles as soon as I get it so I didn’t mix well. I drank the entire large bowl! The broth wasn’t too sweet and salty like some others who put too much MSG. Their mint leaves and sprouts are fresh and juicy with a good bounce.. so I don’t think they’re cutting corners with their ingredients. My dish had alot of tendons for some reason and luckily I enjoyed very much om nom nom. Ambience: Instrumental music playing in the background. Furnitures and decorations are brown, black, and beige. Nothing superfluous… so no hipster interior design with neon accented colors. The restaurant seems really clean and the tables were set neatly. Condiment bottles filled on all the tables. And the bottles were only slightly sticky which is A+ in my books (compared to other places haha) Service: 5/5 I was eating pretty late before their closing time. So I appreciated it that she didn’t sweep floor too close to me. She also realized that I wanted to be alone so she only checked on me once. Value for Price: 5/5 Saw so many people taking to-go! I was going to as well but I’m glad I didn’t. I would’ve miss out on eating out of a comical size bowl and I’d have miss on the siracha and hoisin sauce!!! I think I also got two people’s worth of bean sprouts and mint. Yep, finished all of it!

The staff were sweet old Asian man and woman, they didn't speak much English but they were able to guide us to our pick up order. The place itself is very traditional and obviously authentic. Overall, I recommend for a quick pho spot!

Before starting this review, I should mention that I would say I only know three foods enough to judge critically: tacos, BBQ, and pho... This place had only been open for about week when I visited.

I had the large combination pho bowl. Personally, I think Pho Duy on Federal has the best pho in Denver so i often use that as a standard. With Pho Duy being a 10/10, I'd rate this bowl about a 7/10. The broth was flavorful and not too salty, but they were a little light on the meat. I was a little confused when they didn't bring out a plate with bean sprouts, peppers, mint leaves, and limes as typical at pho restaurants. I looked around and this seemed to be the case with all tables. Lastly, the amount of MSG used wasn't overpowering. No matter where you go, the pho will have some MSG in it, using the right amount is very important. If pho has too much MSG in it, it leaves your tongue feeling numb for hours after eating it. That wasn't the case here...

The service wasn't great. The restaurant had about 8 people in it and it was 20 minutes before I got water and they took my order. It took another 20 minutes to get my bowl of pho. You could tell they were still trying to figure things out because the staff was running around trying to fill orders, which is typical of new restaurants. That aside, everyone was very friendly and everything looked very clean, even the kitchen (you're able to peek into it from the register).

I will return in a month or two and have another go at Pho 63 once they get the hang of things. This part of Denver does not have many pho restaurants, especially good ones, so I see big potential here. I sparked a conversation with the waiter and he mentioned that they also deliver!!! This is rare of pho restaurants! If this place can make a good bowl of pho next time I visit, I foresee myself...

DO NOT EAT AT PHO 63. I have been eating at this establishment since it opened, take out only, the same order, Medium sized pho with EXTRA GRILLED CHICKEN, around 1/week, even in the summer.

Last night December 4, I order the same thing, medium sized pho, extra grilled chicken so it goes for 2-3 meals. When I arrived home I was mistakenly given the shredded chicken.

Tonight, December 5, when I was about 5 minutes away from the restaurant, I called and explained the situation politely and asked if I could pick up some grilled chicken for the mistake.

To my dismay, I was told NO! I was then told if i wanted to bring back my partially eaten chicken from last night they would exchange it??? It wasn’t a shirt, it was food, what were they going to do, serve it to another customer? Maybe the denver health inspectors need to pay a visit to Pho 63!!

The owner wouldn’t even get on the phone, she continued to shout in her native language through the gentleman on the phone to me. I have never dealt with such an insolent person over $12, and a former lifetime customer who has lived all over the US and abroad, never being treated this rudely.

This is also my first public review-I typically don’t believe in them, but recycled chicken? And not doing the right thing is...
