My brother, gf and I visited Uptown & Humboldt at Comrade Brewery and we were glad we did. The gyro and yuca fries I order absolutely hit the spot especially paired with the cilantro aioli. Also, the mango lemonade was outstanding. It reminded me of being on the beach in the Caribbean. My girlfriend got the Prohibition and gave me a bite. It was scrumptious and the fried egg on top was the icing on the cake. I had called them a few days before and talked to Hayden. He let me know where they would be and when I showed up, he remembered my name and said had been expecting me all day. It was obvious that him and Gio were customer focused and it came through in their delicious food. If you are looking for a tasty meal and friendly service, find the Uptown & Humboldt truck; you won’t be disappointed.

I’m not a vegetarian but I really only eat meat once a month or so and rarely eat red meat. I tried to power through the burger but couldn’t. I’m really disappointed because I was looking forward to being able to have a hamburger. Also we came during happy hour and ordered tapas which were advertised to be 3$ off and we got charged full price. Again really disappointed. I was so excited to try this place but probably won’t be back, unless it is on meatless Monday because I know I won’t be served meat.

They will make ANY burger vegetarian/vegan!! I got their vegan patty on a Berlin burger and it was amazing! It wasn’t mushy and tasted delicious!! I will definitely be looking for this truck, because it’s so annoying to visit a food truck and only have one or two options off of a whole menu, but to be able to order the same (almost) thing as your meat-eating friend and enjoy it makes life easier and tastier!

First off, I can’t even describe how excited I was to find yuca fries on the menu!! They are some of my favorite!! But more amazing is their vegetarian and vegan options!! I serve as a project coordinator who is in charge of organizing our bi-monthly on-site meetings of ~100 people, and for our meetings this week, we decided to bring in a food truck to serve lunch on one of the days that folks would be in the office. After reviewing several in the Denver metro area, I quickly decided on Uptown & Humboldt based on the quick response time and thorough, helpful response I received to my initial inquiry. I worked with Hayden on the logistics and at every turn, he was professional and very flexible as the number of people on-site fluctuated as more teams decided to come into Denver.

The event itself was an absolute success, with our team members raving about the food (myself included). My team members with dietary restrictions were very appreciate that Hayden and his team were able to accommodate them so they could enjoy lunch as well! I have already received requests to bring back Uptown & Humboldt by multiple people. While I'm not the one who ultimately makes that decision, I will certainly advocate we do exactly that. :)

I have zero complaints and would highly recommend Uptown & Humboldt to any organization looking to bring in a food truck (or looking for great catering!). I definitely will be making a point to visit their brick & mortar location to enjoy more of their menu in the hopefully not-so-distant future. Uptown & Humboldt has created an absolutely exquisite dining experience from their truck. When visiting them outside of Cerebral Brewing last weekend I was expecting a typical, greasy food truck, but they are not that. Approaching the window I was greeted with a large smile, fun decorations, and clearly thoughtful menu items. I ordered the Prohibition Burger and was over the moon with the result. I am hard pressed to think of a burger I've ever had that was as good as that one. Perfectly cooked, juicy, and a combination of toppings that were incredible. Stacked high and manageable all the while. The presentation rivaled that of restaurants at least twice the price. The food was so good that my friends and I had to go personally thank the owners for a job well done. That conversation led to the cheesecake. The cheesecake is really another conversation in itself. I am not kidding this cheesecake was presented to us in the same way one would be at a fine dining experience in downtown Denver. This was no standard cheesecake. It was done with a creme brulee esc caramelized top and perfectly structured. All in all, I was absolutely blown away by the food, experience, and the owners. The FMB Burger isn’t trying to win a popularity contest—it’s here to impress the palate, not the algorithm. Blue cheese, sautéed mushrooms, fig jam, pickled onions, and micro greens all stacked on a soft brioche bun? This is flavor for people who read ingredient lists like wine labels.

It starts rich, with that creamy blue cheese melting into every bite, while the mushrooms bring a savory, almost smoky depth. Then the fig jam shows up like, “Hey, remember me?”—sweet, a little mysterious, and surprisingly essential. The pickled onions cut through it all with just enough bite to keep things interesting.

This burger isn’t “just” a burger. It’s what happens when someone says, “What if we made comfort food…a little sexy?”

If you’re at Zeppelin Station and looking for something indulgent but balanced, the FMB is your best bet. It tastes like someone actually thought about it—and maybe had a minor identity crisis in the process. But hey, haven’t we all?
