What started out as a seemingly positive experience, turned sour very quickly. Starters came out quickly, easily deceiving our large party of the service we'd end up getting. Luckily the appetizers we ordered were intended for our kids. The hot meals came roughly 30 mins after ordering. The sushi took 1 hour and 20 mins to show. By then our nigiri had a warmer touch to it than normal. All sushi, sashimi, nigiri, and rolls came out at the same time.
In my normal experience with sushi restaurants, the sashimi and nigiri are usually served as soon as they're assembled as the taste changes significantly as the fish sits out. In my personal case, it sat out long enough to cause food poisoning. The salmon roe was days if not weeks old and should've never been served. In my haste, I popped one in my mouth and almost had an instant reaction to the acidity of the ikura. I ran to the restroom to vomit. The taste of the nigiri was masked by insanely sheer amounts of wasabi. Normally wasabi is supposed to accentuate the taste not over power it to hide the age of the fish.
For what was intended to be a final hurrah in Avon/Vail ... turned out to be an experience of the ages and the first time I've ever been food poisoned at a sushi restaurant. Listen to all the 1 and 2 start reviews. It seems they only treat you well if you're a local. I wouldn't even pay gas station sushi prices for the quality we were served. It certainly wasn't worth the absurd amount our party paid.
For a restaurant only open for 4 hours/day... the chef's should be well prepared, the staff should've been attentive (they weren't with us), and the quality should've been amazing...

I initially placed an order for a half rack of ribs entree and asked the server to return to pick up my wife's and kids sushi order. She told me the ribs come out very quickly so to just wait to place the order along with the sushi. Okay, no problem. We decide on our sushi and place the order. The server repeats the order along with the half rack of ribs. We get our appetizers, then wait roughly 45-50 minutes for sushi. Sushi arrives and we're eating and I'm waiting but the server only came back around after the sushi is done. Keep in mind we've been in the restaurant about 1 1/2 hours with 2 young children who are done sitting. The server finally returns and we ask about my entree. There's no apology initially and she blames the kitchen. This is my biggest pet peeve. As a restaurant manager for nearly 20 years it's obvious she forgot to enter my entree into the system. Then instead of acknowledging her error she blames the kitchen. That is unacceptable. The server finally apologized for the error and stated it happened because they're short staffed. I get it. We're all short staffed but that doesn't mean we can blame others for our mistakes. Anyway I went home and ate leftovers and made the best of the night but will not be returning to Sato's. We had to ask for ONE glass of water several times before one was brought over. At the end of dinner we had a gift certificate we decided to use to take 2 friends with us as a Pre-wedding dinner for their wedding in 2 weeks. We left a tip(cash) on top of the remaining balance on the gift card to give her a good tip for her the shotty service. Working in the service industry in Beaver Creek I would never leave a bad tip myself. We get approached saying we cannot leave gratuity plus the cash from remaining balance on gift certificate, RIGHT IN FRONT OF OUR QUEST'S FOR DINNER. Being a person of principle, that it just completely rude in my book, take one of the payers aside. We also wanted a nice picture, and the server seemed so annoyed to that we asked her to do it, she half assed it, came out horrible. We took the picture ourselves on a table.
