First day 4 star, came back they following day it went down to a 1. First day food was salty but since I was there by myself in the rear patio and I was very hungry I really didn’t want to complain. Following day what a disappointment. The food was beyond what should be considered acceptable saltiness. If you are going to eat here and you have high blood pressure BEWARE. I have low blood pressure and I ended up calling my doctor because I was so intoxicated by the salt and no I did not eat the entire meal, I ate about 1/4 of my meal and then packed it up. I did say something to the waitress, which she then called the the manager but the manager does not hv good managing skills. All she said and I quote was “ well they use soy sauce, goyza sauce which is high in salt and mayo which is salty too ok”, and walked away, not mam I apologize, could I get you something else? , nothing just excuses. Look I spent $25 the first day on a single meal and $40 again on a single meal the following day. I hv no issues spending money on quality food but that was unacceptable and even though I was missing an item in my food I was still charged.
But what made it worse was the loudest F bombs from the back table and the front table, oh and the incessant flies and super loud music. Manners are a thing of the past sadly…..
I hope that the food could be less salty because the taste concept is great but toooo much salt ruins it. Also better training for the managers to handle food issues. The broth clearly boiled down too much which can cause an over abundance of salt build up and that can be handle by adding more hot unsalted broth, I went to culinary school and had my own food establishment so I know what I am talking about.
I hope that these issues are addressed because I was not the only person who agreed with me as I brought home the broth for the family to taste and it was dumped in the trash by one but the other added some hot water and said it was very tasty, so see I knew it could be fixed.

They were not seating the outside tables though it was a beautiful day, so it took a lot longer. I waited forty minutes to get in bc I got there at noon. There are about ten two top tables. It also probably would go faster if they provided menus to the people waiting so they would be ready to order as soon as they sat down. Many were first timers and some paper menus in a realtor type outdoor box would have been ideal. The only review that posted a wait time said 5-10 minutes so I figured maybe 30 minutes. I planned to eat there by myself and take two "to gos" for family. When I got in I told the waitress I was in a rush (had 20 minutes now) and asked if the pork belly ramen took long or I could just order something that did not take so long. She said ten minutes. So I ordered mine and the two to go. 20 minutes later I asked her to make mine to go. 10 minutes after that I received my order in a to go bag but the others took ten more minutes bc she said she waited to put the orders in since I was taking them after I ate. What part of "I am in a rush" did she not understand? I was walking out the door forty minutes after I ordered. So much for ten minutes. I had to Chow down in my car. Fyi - ask for napkins, they don't include them in the to go bag. If you get there at one you dont have a wait. There were three servers for the twenty max capacity and I never got a refill on my drink. When I waited tables in college, less than 7 seats would have made for a poor lunch income. My ramen was $10.50. They offered appetizers and desserts if you had a couple of hours for lunch. The ramen was good, the pork looked like half a thick slice of bacon, and there was half a soft-boiled egg in the ramen on top. Read moreCame across Kaedama on IG and just HAD to try it cause of the name. I read reviews prior to coming so I knew it was a smaller joint, and the reviews definitely are correct. The restaurant is a cute, small little spot close to downtown El Paso. Parking is free if you can find a spot along the street in front of the restaurant. If not then there is street parking around the corner but you will have to pay, which was the case for us.
Kaedama is a snug little restaurant, inside they have a decent amount of table. Unfortunately we came right when they opened so they were packed for lunch. Only option for seating was in their outdoor patio. Not too bad since the weather was a bit cooler than normal for El Paso.
Our waiter was quick to get our drink and food order. He also came around a couple times to check on us so no complaints there.
I ordered the pork buns for appetizer and the hot babe for ramen. My husband tried the thicc boi ramen, which I’m assuming is one of their popular items since I heard at least 2 other tables ordering it as well.
The pork buns were good! They season the pork very well, the sauce is very soy sauce heavy and you can taste the sodium right off the bat. As for the ramen, I’d definitely try their tonkotsu next time. I should have read the menu better, then I would have realize the broth is a soy sauce broth. I usually prefer a more creamy broth. But that’s on me for not reading better. Overall I’d say the hot babe is good though. I got level two spice and it was perfect! Not too spicy but not too mild either.
I’d give this place a solid 4 stars. It is a bit cramped both inside and out. The pork buns and ramen definitely had a strong soy sauce punch to both. I love that the meat in both the buns and ramen were seasoned heavily. Gave a lot of flavor. Would definitely recommend Kaedama if you’re looking for a ramen...
