Stretched — Restaurant in Eugene

Wow! Stopped into Coldfire Brewing and before I started drinking (too early), I was already eying Stretched. Ended up caving after a couple beers and it hit extra hard. The folks working the truck were quick, very friendly, and super helpful. We struck up a nice conversation afterwards too. I got the pork zhajiang chili oil biang biang. The noodles were sinfully chewy, wide, and not too thick. The flavor was complex, spicy, and absolutely out of this world! Heat was not overwhelming, but just right — at least for my palette. They can also hold on the meat for the vegetarians/vegans in the house. I’ve had some decent food from Xi’an, but I won’t claim to be an expert. Stretched is hands-down the best food I've had in Eugene. We're from Dallas and so have been used to quality food of every cuisine on every corner, but I don't think I've had noodles I love more than Stretched's! Perfectly bouncy, perfectly spiced, perfectly portioned. And the owners/cooks are so sweet and happy to see people enjoying their creation. We've been coming to Coldfire more often all summer just as an excuse to eat a bowl of their stretched noodles, to the point that it's becoming an addiction! I don't normally give 5 stars across the board, but I was very impressed by Streched this evening. Located next to Coldfire Brewery Stretched is a food cart that has some serious flavor! This food cart offers Asian style noodle dishes. Every order comes with made to order stretched noodles. I had the Beef Cumin dish and was blown away. Some places offer spicy food, and that's all you get ... spicy. But this dish had a spice kick and you could really taste all the spices. The lady told me they source the meat from a local farm.
