Marlos Bakery — Restaurant in Fairbanks

I went there on 22 April since Jason's was closed thinking I was gonna walk into a place with donuts, cookies, cakes and the like. I found it to be a cozy little place that has a great ambiance and a sophisticated offering of croissants, some cookies and bars and other Euro style bakery products. If you're looking for a place that feels high end (for Fairbanks) and don't want to bother with the masses, this place is for you. I got a Cinnamon Roll with homemade cream cheese icing (and boy was it homemade!) for $3 and it's the best one I've had in town thus far. They also offer coffee and tea beverages and nice little place to sit that is reminiscent of a Euro cafe. There is a $2 minimum for card purchases but honestly, if this sounds like a place you'll like, I doubt you'll have any issue meeting that minimum. The lady behind the counter was friendly and knew the gentleman that came in after me by name indicating that she takes the time to get to know her customers. Marlos Bakery was a highlight to my Fairbanks trip. I visited multiple times since it was nearby my airbnb. Their pastries are delightful & baked with care. You can taste the quality in every pastry (sweet or savoury) & they have a good selection. My favourite is the almond croissant. It is light & airy, flakey with a touch of almond sweetness. It's the best almond croissant i've ever had & it beats the ones you get in Europe, which are usually half the size! 🏆🥐🫶 Their creamy chicken gnocchi soup was a standout as well. Highly recommend! We very much enjoyed the baked goods we got here. I chose a raspberry kolache and a strawberry rhubarb tart. My cousin had a blueberry kolache and a chocolate croissant. Everything was delicious and the pastries were large. My cousin’s kolache with whole blueberries had far less fruit filling than my raspberry did (I think it was a paste or puree or something) - I’m not sure if that’s typical but she was a little disappointed.
