Soba-Fairbanks-a new dining experience for us. Moldovan cuisine! Moldova borders Ukraine and Romania. Think Eastern European type dishes. Soups and stews, hearty meat dishes, cabbage, and dumplings. Some very interesting offerings. The décor, while slightly kitschy, is appealing. Faux fireplace, wood & rattan, and lots of traditional looking embroidery. A nice atmosphere. Pretty busy during our visit with only one server that we ever saw. He was fine but not really personable.
My DW decided to eat light this meal and chose to try the chicken noodle soup (Zeama) made with homemade noodles and served with two pieces of hearty, oaty bread and a small portion of sour cream to be added to the soup. She really enjoyed the rich flavor of the soup. Adding the sour cream towards the end did not affect it much flavor wise, just made it closer to a cream soup in texture. I chose a dish called Pasta cu Creveţi-a shrimp & pasta dish-German egg noodles with garlic shrimp in a special vegetable sauce (from the menu). This was really delicious. Sweet tomato flavor with tender (local?) shrimp. Not overly spicy, just a nice full flavor. I didn’t detect any other vegetables in my portion but it may be that they are cooked down in the sauce. For a starter I chose Salată de Varză. A salad reminiscent of coleslaw but without the creamy, sometimes heavy, dressing. Shredded cabbage, peas, and green onions. I didn’t have high expectations but really wanted some time of veg with my meal. This was unique and surprisingly good. I couldn’t really compare the dressing to anything else but it was very light and complimented the ingredients very well. Would definitely order both of these again. Soba is an outstanding experience in every regard, from their timely and helpful service, to their choice of decor, down to the fantastically fresh food that was delivered to me with no flaws. The experience has actually left me with the dilemma of how to continue my day in a way which meets the high bar they've set.
If you go, I heavily recommend the Mici and their Borsch. Out of the three items I tried, these were the ones to excel and I would go so far as to call them the specialty. My system for ranking food service assumes a 10/10 to mean the total experience to be flawless, that there isn't another restaurant in their genre that can compete. That said, I am reluctant, but I believe that out of over 600 dining outlets I've tried, they will be the 3rd to earn a 10. They immediately topped much more expensive and ambitious fine dining joints I've adored in London.

This is the first place I’ve ever had Moldovan cuisine; my family came on a Saturday to try the buffet, and later (during the shelter-in-place) a friend and I ordered delivery through DoorDash. Both meals were unforgettably delicious. At the buffet we got to try a little of everything, and each dish I tasted was my favorite while I was eating it! From chicken schnitzel with rich mushroom sauce to delightful dumplings to a unique & succulent salad of peas, carrots, potato & hardboiled egg, the range was wide and wonderful. And the many-layered honeycake for dessert was perfection. I’m also really glad I tried the compot! I had no idea what this drink was, but ordered it on a whim; turns out it was a fruity & refreshing treat! I’d definitely get it again.
For the delivery, we had potato pierogi with a cup of bors, and again every component was awesome. The pierogi themselves were pillowy clouds of comfort, perfectly rounded out by the thick sour cream and crispy onions & bacon topping. Borscht is one of my favorite soups, and Soba’s version was well-balanced and hearty.
