Definitely not great sushi, also not awful.
The indoor environment is fine. Typically clean. I’ve never had an issue with service. Though last time I was in there seemed to be too many people working at once, as 2-4 people were just standing near the entry way. I’m sure this was to take care of to-go orders but it was a bit odd. I didn’t consider myself much ‘in the know’ about quality sushi until returning from Reno, coastal cities, and also eating at multiple places in the Boulder area. I now know Jaws does not have that great of food. I use to think if was 5/5 after my college friends hyped it up and visiting a few times. But with a fresh perspective I’ve realized: the choices are very American with not much exciting variety. Most of the special rolls have cream cheese in them, which could be a pro or con but for my this was a con. The rolls also fall apart quite easily when attempting to eat and the rice is dry. The nigiri did not taste extremely fresh, had a weird dry/waxy feel to it, and I likely will not be ordering nigiri from here again. The baked mussels were ok but lacked much broth/flavor aside from whatever cheese they included on top. Miso soup was flavorless, ‘salad’ they provide is either coleslaw or some noodle mixed with what seems to be mayo. Not even worth the $1. I do* like their cocktail selection, great choices!
As others have said, it appears to be all college students working here. Even the chefs. Likely drives away some authenticity.

Read moreI'll start by saying I've been to nearly every sushi restaurant in Fort Collins, so I am somewhat of an expert at this point ... (at the very least, highly informed). I've experienced the distinctive tastes of the Dynamite bowl and delicious Vegas roll at Suehiro (now closed—sorry!); I've dined on two for $9 classic rolls at Suh as a poor college student; I've experienced the TERRIBLE service, but aromatic miso soup and pallet pleasing cucumber salad at JeJu; I've even waited the standard hour and half for my spicy salmon and Boston rolls at LuLu's ... there's been many more, but the point is NONE hold up to JAWS. The tastes are AH-MAZING and the prices are well under what I would consider reasonable. To top it off, the service was first-rate: the staff is knowledgable, attentive and very prompt.
The miso soup is okay—less flavorful than some other variations around town. The cucumber salads (different almost daily based on who makes it and what fresh ingredients they have on hand) are always refreshing. T Chum Bucket is creamy and decadent. One caveat is sometimes, depending on who is in the kitchen, the rolls can be overly-riced and under-stuffed with the goods. That's always a disappointment. Lack of consistency can be a killer for any place, but as far as that goes, JAWS meets or exceeds expectations most of the time.

The Chum bucket was really nice and filling though, I'd recommend that, but the fact that I have to suffer the embarrassment of having to order something called a "Chum bucket" with a straight face makes me not want to order it (even though it's the only thing with flavor on the whole menu).
