Update 2: Water and noodles were back to normal on my most recent visit. Not sure what happened last visit but I'm glad it was just a fluke.
Update: I was here again yesterday for my third visit. There are two other recent reviews mentioning the water tasting bad, which I can confirm occurred this visit too. Another one mentioned the broth being overly salty and the noodles being cut up, which was also my experience on this visit.
I'm hoping this is just a fluke and they get this addressed quickly, because I want this place to succeed.
I'm leaving my original rating from the first two visits, as well as my first review below. If my next visit is the same as this most recent one, my rating will be updated accordingly.
Original review: I visited on their grand opening and had the pho number one and the grilled pork banh mi. Both were great. The pho comes with the expected accoutrements; Thai basil, cilantro, sprouts, and jalapeño. The tables have sriracha, hoison sauce, and chili sauce to add to your bowl. The banh mi was a good size and flavorful.
The service was quick, friendly, and handled the busy first day crowd without issue. The inside was nice and clean. The menu was extensive with pho, banh mi, rice, and vermicelli options.
I'm glad we have a place like this in Gainesville now. I've been wanting something like this for a while and this satisfies that craving easily. Pho Viet Number One is definitely worth...
Read moreI recently discovered this restaurant through a social media post on Instagram and decided to visit this restaurant on 08/20/2025. 5 stars... this was decided after spending 5 minutes in the restaurant.
First I was greeted by a very kind and positive individual by the name of Hung. By the way he conducted himself, I believe he is the owner, but if not, he definitely exuded confidence. The most notable feature of this restaurant was that I was greeted with a genuine smile; this doesn't happen anymore. A picture is worth a thousand words, if I could capture his smile in a photograph, you can easily tell a story of a cheerful and happy person.
Secondly, the food was outstanding. I generally am dissapointed with the quality of many restaurants in Gainesville, but this one stood apart from the rest. The pho reminded me of the genuine Vietnamese restaurants I would try in New Jersey. The northeast is usually heralded for the diversity and quality of food and I think I found a gem in Gainesville. It super exceeded my expectations that I am here writing a review about it! The most dissapointing part of my visit was not allowing myself enough time to eat at a proper pace before returning to work, this is my own fault.
Looking forward to returning to this restaurant, I've already shared this information to my coworkers!

Very fresh ingredients well prepared with attention to detail. Delicious homemade sauces . Spring rolls and egg rolls were the best I have had ! The menue is much more varied than any other restaurant in Gainesville. At least 7 pages to choose from. We had the duck salad ,the salad mix was great and fulfilling. The service is friendly and helpful, professional all the way. Prices are very reasonable in comparison to what you get and the quality in wich your meal is served.
