Definitely the best taco truck in Colorado. One of the best taco restaurants in Colorado period, and in the running for best nation wide. If they served alcohol I'd be hard pressed to find a reason not to say they are the best taco spot in the US.
If you decide to eat-in, the views are great, although it is by the interstate.
I've had street tacos in several states, including Ensenada and Rosarito, Mexico, and I've eaten literally hundreds of tacos in California. These were some of the best I've ever had. The fish was perfectly crispy with fresh lettuce and chipotle mayo. The chorizo had spicy flavor with just the right amount of crispy. Tortillas were warmed with a little crisp. All served with several salsas, sliced lime, cucumber slices, and grilled jalapeno.
Had I known how good they are I would have ordered more, but I saw the menu advertising churros and ice cream! After the spice from the jalapeno and tacos, the soft-serve vanilla ice cream, drizzled with a little caramel, served on top of perfectly crispy yet chewy fried churros with caramel filling, really hit the spot.
I spent $15.50 for 2 tacos, horchata, and churros with ice cream. And I left a couple bucks in the tip jar. I had to use the ATM down the street at the convenience store because they're cash only. There's a delivery van parked there too.
