We love hotpots. We buy materials even from Calgary and make hotpot at home. With this restaurant here in town, there is less need to travel to Calgary and buy the materials. Couple of things I noticed here on the comments. By no means we are experts but here are some of the tips about hotpots that we know.
It is important to know that the broth is NOT soup and should not be drinking it after you cook the meat as it gets very greasy and some people may get sick drinking dissolved 'fat' from it. If you want to drink the broth, drink it before you cook rounds of meat in it.
Make sure that you use a separate set of utensils to cook raw meat than the one you use to eat so that there is no cross-contamination with raw and uncooked food particles.
Some of the foods should be cooked towards the end of the meal so you do not make the broth too thick such as noodles or anything that has high starch contents. Meat will typically make the broth thicker too due to the high protein contents if you cook rounds of it. Always ask for more broth or add water to the pot.
I would probably ask for more vegetables as it can help to lighten up the taste of meat.

The broth had very little flavor, and the extra sauces were the same. Maybe I'm used to a stronger broth and they muted it to meet local tastes, but it was super bland. There was also only a few veggies where traditionally you get bowls and bowls of things to put in the pot (try looking up hot pot on google and you'll see what I mean.) I will say that the meat was good and the shrimp were quite large. Potstickers were not good at all, also no flavor. You should also be forewarned that if you are at a table for 8 with empty spots, they will fill every spot with more guests if needed (good or bad, depending on your view). Basically you choose a broth and protein and the veggies come with. This place really nickel and dimes you for everything, including more sauce. The restaurant looks nice! But they are kind of going for an elegant and romantic atmosphere which is strange for a friendly and family oriented type meal. The 3 included sauces were good but not what I would have chosen for myself. The BBQ sauce in particular was strange and a bit fishy? The cabbage that came on my vegetable plate didn't look great. I had to ask for chopsticks, a bowl, and a spoon. That was weird considering hot pot is soup and this is an Asian restaurant. Then finally I had to ask for soy sauce.
