My wife and I traveled to Greenville for a wedding. As we always do when traveling, we interact with the locals. We are always searching for the hidden gems, the locally owned restaurants. The strong majority all told us to go to the Ashen Rose. After checking out the Google reviews, the yelp reviews, this definitely seemed like our kind of place. Being a chef, the Ashen Rose looked like a place we could really get excited about. Let me start by saying that the food was absolutely amazing! We started with the triple sampler. Steak bites, bourbon molasses wings and beer battered onion rings. All next level Pub grub. Really great food. For our main course I ordered half Chicken Parm sandwich and she the fried bologna deluxe sandwich with fries. Also absolutely brilliant food. It tasted like small town Texas, as it should. We were terribly disappointed in the service. There were less than 30 patrons in the entire restaurant. It took nearly 45 minutes for our appetizer to arrive. While we were enjoying our delicious appetizer the restaurant had pretty much cleard out and we were a pair of just a few remaining customers. When we were finally able to order our main courses, it took nearly 20 minutes for those to arrive. So over an hour wait time for service alone. The real kicker is, during all this time. Our drink's were only refilled one time. To sum it up, I'll leave you with this. My wife and I "discovered" The Ashen Rose about a year ago and have been back nearly monthly since. We live about 35 minutes away, but it is always worth the trip. When family comes in to visit we always try to squeeze in a trip.
The worst food and service we had there was during a bike race they had a few weeks back. Had we known in advance that there was an event that day, we wouldn't have gone. That being said, the service was still satisfactory and the food was still good! We just love the place.
My wife loves the "Deluxe Fried Bologna" sandwich. So much so that she has me try to duplicate it at home on occasion. The Cobb salad doesn't disappoint, but my favorite is the Fuji Apple Spinach salad. On cheat days I like the fish and chips. The fish is cod; they don't try to sneak catfish or tilapia in on you like many places these day that don't define "fish." The burgers and cheesesteak are a coin-toss selection where you'll come out a winner either way.
For a small-town bar, the draught beer selection is impressive. The choices have ranged from an interesting mix during supply-chain issues to downright great most of the time.

For example, the fried pickles are quite good, but not the 5 star fried pickles at Norma's Cafe in Frisco. On the other hand, the steak bites are nothing but exceptional.
The burgers are made from something other than your typical grocery store ground beef, yet no one there could tell me what it actually was. No matter what, still scrumptious. The sweet tea is really sweet! The desserts are great.
I took my wife, my mom-in-law and my two tweens there to prove that you can go to a pub without any need for alcohol, and it worked out nicely.
I would have happily rated 5 stars except that even on a Friday evening between 6:30 to 7:30, it just seemed so... listless. While everyone was friendly, there was a sort of ennui that took the ambiance down.
As others have said, the structure does have very poor acoustics. Also, it's not really "party greater than four" friendly for a sit down meal, unless you do what I did - push the cramped bar tables aside and make room, adding bar stools to one table.
