My wife and I have been eating at Erik's for over 2 years now and would consider it the best mexican restaurant in the Hempstead area. We never have any complaints about our food. "Nachos & Margaritas" are now a Friday tradition for us here and a good way to shake off the week.
I recommend: Order Fajitas Cancun and Chicken Brochette or a Taco Salad with a Jumbo Margarita. If you are ordering to go, place the order when you arrive and have a margarita at bar while you wait! (Drink responsibly)

I've always wanted a place where I can sit down, know the staff by name, order "the usual" and they know what I want. This is the first place I can say I've developed that relationship. They even help me with learning Spanish! I can now order my margarita in multiple languages haha.
Shelly is a great person who handles multiple roles best I can tell. To only call her a waitress wouldn't do justice. It seems like most of the staff juggles multiple roles. They also employ teenagers just learning what it's like to work and I can respect that.
There is nothing that stands out about the outside or inside of the restaurant, but that's what makes it a great "dive". You could entirely miss it since it is so close to the other mexican restaurants on Hwy 6, but it is still the best of them. I feel like they could use an overhaul with better outside signage to bring in more people. They must not need it though, since the parking lot is filled at peak times. Never had a parking problem though.
Their "sit where you like" policy is something I enjoy.
In the years I've been ordering food to go, I cannot recall any messed up orders.

If you're tired of the same exact mexican menu at every restaurant, Erik's provides some refreshing options:
Fajitas Cancun - These fajitas come in a delicious Wine Butter Sauce that changes everything. Pretty much anything on the menu with this sauce is good. Also included are diced mushrooms, onions, tomatoes, etc that are ready to fill the warm, fresh tortillas that come with it.
Nachos - If you order the ground beef traditional nachos appetizer, they come with melted cheddar. If you order the chicken nachos appetizer, they come with melted mozzarella? cheese. I appreciate the difference as the cheeses compliment the meats they are paired with.
If you order the Nachos Supreme as a meal, be hungry or prepared to share the mountain of chips covered in fresh toppings and queso.
They offer fresh OR pickled jalapenos on request if you need more.
Taco Salad - The shell that the salad comes in is fresh baked and the best flavor shell I've come across. It's crunchy, but also soft and flaky like a croissant or pastry. The salad itself is big enough to share and should fill any appetite. You can get it with ground beef or fajita meats.
Chicken Brochette - If you aren't a shrimp fan, try the chicken brochette. Each one is a thin strip of chicken and a sliver of pepper wrapped in bacon and lightly fried. They come in the awesome Wine Butter Sauce and diced vegetables which definitely adds to the meal. It's a good appetizer to share or a meal itself.
Other Mentions: Some of the fajita options include sausage and it's a nice change. Good flavor. The classics like tacos, chimichanga, and enchiladas are all pretty good as well.

I drink the House Jumbo Margarita on the rocks with no salt. My wife drinks the Strawberry Margarita on the rocks with sugar on the rim. The frozen margarita is the exact same as the rocks best I can tell.
I've tried well over 50+ margaritas. I try one just about everywhere we go in the search for the "perfect margarita". Erik's gets a 4/5 because for the price of their margaritas they are flavorful and give you a nice buzz even after one. Let's be honest. That's what they're for right?! I've never needed more than two.

However they clearly have some cleanliness problems and I was extremely disatisfied with the food. The very first thing I noticed when we walked in was the smell. There is a very strong dirty urinal sort of smell throughout the entire restaurant and it definitely made me lose my appetite a bit. When we sat down of course the booth seat was sticky, so I sat on my flannel. Then when I opened the menu, the inside was wet and had pieces of onion stuck to the plastic. They brought us chips and salsa and the chips were good and I could tell they were homemade, however the salsa was obviously canned and tasted very bland and watered down. I ordered the Pollo Asado plate and was not happy. The chicken was terribly dry and bland, the charro beans were undercooked and flavorless, and my rice was burnt to black from being served onto an insanely hot cast iron plate.
