Dined-in at lunch hour. Atmosphere was busy staffed with 2 servers that took command of the floor alongside a floor manager. Small restaurant with middle floor with tables of 4, 6, and 8 tops. Booths alongside the left side were 2 seaters and 4 seaters alongside right side of restaurant.
Restaurant has similar layout of former restaurant location with kitchen on left, bathroom in back of house.
Menu items had variety and traditional concepts with vegetarian options.
Server greet and acknowledgement was established within 30 seconds of being seated with order taken within 2 mins. Food wait time when busy was under 7mins, which is pretty amazing considering how new the restaurant is.
Menu items were limited as many beverages and apps were not available. Not unheard of upon week 2 of a restaurant and looking forward to going back to see how inventory management is sustained.
Ordered the traditional Tonkotsu ramen alongside a Chashyu bun. Both were served together without option of to guest of pace. This was okay considering it was only a single app.
Bun and ramen were served warm to hot, which was the only negative comment within my experience. Wish ramen was served piping hot. Great flavor, fresh ingredients, and could tell broth contained balance and umami.
Wish list: any chance high top chairs with table around kitchen with a more open concept? Will menu change with seasonality and fresh ingredient availability?

This was a disappointment and my belly is still hungry. We went here for my husband’s birthday dinner and we left so very unsatisfied. Two of the kids got miso chicken ramen, one kid got the seafood ramen, the husband got spicy kimchi ramen and I got chicken teriyaki bowl. Server was engaged with table but had me disappointed from the beginning because he made me feel like we should have went somewhere else instead of there. His joking demeanor was very disrespectful to my 8yr daughter ( while I laughed it off as a joke, she did not appreciate his sarcasm) I do not agree with an automatic gratuity for a family of 5 and when I asked him what happens if I thought he sucked as a server his response was “sucks to be you”. Atmosphere is like a cafeteria, not date night appropriate. There is no alcohol served and if you don't like the super sweet Japanese soda there is not much else to choose from except hot tea and the usual American Soda. My granddaughter ordered the kids Chicken Ramen and a sweet Japanese soda, she did not like the ramen or the soda. I ordered the Dry Spicy Dan Dan Chicken Ramen. I liked my Ramen but even with a side order of chili oil was not spicy. The Green tea I ordered had no flavor. I will try it again but will bring my own Green tea and spice.
