Be Kind Bake House is the best! I'm a chocolate chip cookie fiend, obsessed with finding the perfect recipe, and here it is: the metaphorical Holy Grail of cookies. The outside of the cookie is crisp enough that you can taste the cooked butter, and the middle is soft but not soggy. A chocolate chip cookie is best judged by the bites that don't have chocolate in them - and this is IT. We stopped by two days in a row because I'm frankly a glutton and couldn't resist. No shame. The raspberry rosewater cookie was also fantastic - softer texture similar to a scone to hold the moisture from the berries (but much lighter). The icing is perfect, too - working with rosewater is a delicate dance, as too much can ruin the flavor of whatever you're trying to make. Just the right level of sweetness!

Yesterday, we tried the lemon pine needle shortbread and everything bagel bites. Shortbread? 10/10 on cuteness. The lemon-pine flavor was bright and perfect for the morning. The everything bagel bites? Absolutely amazing. I thought I'd bite into it to find plain cream cheese filling - but no, no, no... this was CHIVE cream cheese. The chive flavor was crisp, fresh, bright in the biscuit-bagel reminiscent dough. I don't even have to tell you that they don't skimp on the seasoning, either.

My husband and I had our wedding in Honesdale, and were looking forward to utilizing all local vendors. We were recommended BeeKind bakery by our venue, and decided to give them a try. Being chocolate lovers, we decided that it was a must to do a chocolate cake through and through. We met with Casey to try a chocolate cake that she could prepare for our day- it was incredible! We are also sticklers for high quality ingredients, and casey worked with us to experiment with different flours and oils that fit our criteria. We had some pushback from family on the aesthetics of a dark chocolate brown cake, but we trusted Casey would be able to deliver something beautiful. And that she did- with the help of our florist, Casey delivered the most gorgeous three tiered chocolate cake we had ever seen. The reaction from each and everyone of our 100 guests spoke to how delectable the cake was. So many of the guests stated that it was the best wedding cake they ever had, and how they loved that it was chocolate and not your typical boring white wedding cake. Weeks later, we are still hearing from guests about the cake. We have the top tier saved for our one year anniversary, but there is no way it will make it until then. Massive shout out to Casey and BeeKind bakery for truly making...

My hubby & I were in the Honesdale area to check out a popular breakfast place but to our dismay, it was closed this weekend. Determined not to waste our 45 min drive, we walked around the pretty Honesdale Main Street & checked out the shops. That’s when we stumbled upon this cute little bakery with a sweet name, “Be Kind Bake House”. How can one resist, right? We were immediately greeted by this friendly young lady behind the counter & the array of interesting & delectable looking goodies caught our attention right away! I love that they offer unique baked goods. Of course we bought a few of each: everything bagel bites, macha white chocolate brownies, pine needle lemon shortbread cookies, blueberry lavender cookie (I think?) & their salted honey pie. Every single one was delicious! My favorite of all though was the Pine needle shortbread cookies. The hint of pine flavor is heavenly! And I love that it wasn’t terribly sweet. It went perfectly with my tea later in the day. We’ve found our new favorite bakery & we can’t wait to go there again this weekend! It is...
