This place was our secret find during Covid. We happened to just go there and we were pleasantly surprised at the good food that we got. We have kept going back religiously every week since then. The $1 Tacos on Wednesdays was the initial draw and the cost was so reasonable that no one on our work team would turn down an offer to visit Jaibos for lunch. There are regular tacos and special meat tacos. The regular tacos are the ones that are $1.25 on Tuesdays. My favorite tacos here are the Pastor (marinated Pork) and Barbacoa (Beef). There are other tacos like Lengua (Tongue) Shredded beef dipped in sauce, Chicken, and beef. They even serve Nopales(Cactus). The quesadillas are good too. The green creamy sauce which has a spicy kick to it is my favorite sauce and I definitely would like to learn to make it. I use it on everything here. The barbacoa simply just needs lime and onions. I got seafood soup in the past and have loved it. It is a rather large bowl though and comes with crab and shrimp. We ordered the ceviche and there were so many jalapeño seeds in there that we had to take them out to be able to eat some of the ceviche. We had at least two tablespoons of jalapeños with seeds in the ceviche - overboard!
I showed the waitress and she gave me the “and you expect me to care look”? I asked her to bring me another ceviche (that I was going to pay for, I wasn’t asking for a freebie) and she told me they were fresh out of ceviche. We went in there before 11am and they were already fresh out of ceviche…right….
I had been to this place before and the food was great…but this time both the food and staff was horrible. I won’t be back. There are WAY TOO many great places for cilantro in Houston to have to settle for ceviche that isn’t even edible.
It’s very hard for me to write a bad review on businesses, but if the morale of the staff is so poor that they churn out “I don’t care” service and food then they deserve...

It was so incredibly hot that my business partner, who eats the hottest peppers around, had to throw in the towel of defeat and pull out the jalapeños. The pictures below are proof of the jalapeño overload.
I was not able to eat it at all so I asked the waitress to bring me a second bowl of ceviche without the jalapeño overload. She looked at me like I was cra-cra and told me they were out of ceviche…at 11am. Right…
The service matched the jalapeño with ceviche dish we ordered. It carries an overload of bad attitude…
Overall, we won’t be back ever again.
I contribute to a lot of reviews on this platform and i don’t like writing bad reviews…however, there are too many great restaurants in Houston to accept sub par service and food.
