Went to my fav Jax ramen place on a Friday and shocked to see it was closed for a holiday, and Krapow next door as well. I hadn't had ramen since before Lent so I remembered a friend recommended Kimbe which was closed by and I'm glad I did! Decided on pork broth as I use it to gauge all ramens. It was not a creamy tonkatsu as I am used to, but the broth was served hot and it was a savory pork & chicken flavor, just salty and light enough. I asked the server for firm noodles and she assures me they were always prepared that way as the broth is added. Super bouncy and al dente curly noodles. The Kimbe bowl had great slightly seared chashu but the fat was perfectly melt in your mouth, grilled shrimp and surprisingly tender sirloin tips provided a balance of proteins and noodles. The egg was soft boiled as a ramen egg should. A light sprinkling of scallions and corn, I would've liked a bit more veggies, but what was there was an addition to the texture. My power went out so I ordered from here through BiteSquad. Very mediocre. The spring rolls were kinda soggy with very little flavor, had to drown them in the sauce it comes with. The miso soup smelled and tasted like rotten milk! Asked for no eel sauce in the instructions on my sushi, and it was literally swimming in it, almost inedible. The other rolls I had weren’t bad, but they weren’t great either, a little on the bland side. Even the shrimp sauce that came on the side wasn’t that flavorful!!
