First off I don't want to say if this place is tradition or not like some of the other reviews I have read on here. I have never been to Vietnam so I would not know the difference in what the north and south serve. My family is from Vietnam and I have eaten Pho at home and at restaurants all over the country including Orange County California to Houston Texas to name a few . This places Pho is nothing like anything I have ever tried. There were two tables there and we were the only ones waiting for our food. I noticed that the chef was cooking something in a pan and thought it was maybe To-Go food but then he plated it and the sever brought two bowls over. Everything was inside the bowl vegies and all. Noodles were bit under cooked. I then tried the beef and knew what he was cooking in the pan. I'm assuming he cooked the meats and meatball in a pan with maybe some soy and garlic before he put it into the pho bowl thinking it would give it more flavor. That totally threw off the taste of the whole bowl. I did not taste any aromatics in the soup at all except garlic. My GF order the chicken pho . Both has garlic in them which I feel overpowers the soup. Like I said I have never been to Vietnam but most pho I've tasted are give or take similar flavors. I know this place is trying to do something different maybe but I just don't think it works. Also my iced coffee tasted like it had more condense milk in it then coffee. I not usually the type to complain while I'm there but was very heated after I left that I had to say something. I had reservations about going here but they were the only place open so early in the morning. I generally hate going to fast casual Pho restaurants that you have to order from a counter and charges you $18 for a Chef Special Pho that only comes with beef, briskets and meatball when you can get the same Special Pho anywhere else with tendon, tripe, brisket, flank, streak, and meatball for $14-16 around here. Me coming back is probably not gonna happen even to get a refund that is just not me. There was no one else there so the staff should have at least came by and asked me if there was anything wrong since I took two bites and stopped eating and also left leaving a full cup of coffee. We got two vermicelli bowls (the trio and the egg roll one), two phoâs (one chicken and one meatball), and two spring rolls (one shrimp and pork and the grilled pork). The shrimp and pork spring roll was good but the shrimp seemed to be the frozen peeled ons. The pork was good but very little meat. My kids liked the chicken pho and seems to be a good amount of chicken. My meatball pho had too much noodles in it and like 4 pieces of meatballs. They fill the container of broth a little halfway, which was not enough for how much noodles was in the bowl. The noodles soaked up the broth they gave. I was really disappointed in that. The vermicelli bowls were really disappointing to us. So much noddles and not enough toppings to compensate and the sauce they gave with it was not enough at all. It was in the tiniest suave container Iâve seen for a nuc mam sauce. Overall I give it a 3 stars, the flavor was there but portions are really, really off and the price is kinda pricey. I donât know if I would go back, for the price there we could get a better, portioned meal at pho today or bowl of pho. We threw half of the food away (mainly noodles) which kinda upset us since we donât like wasting money like that. And I see in the other reviews that the owner is very defensive so let me say that for spending $15.60 on a bowl of pho I do expect more toppings.    Read morei wish i had better things to say about this place as i awaiting in anticipation of its opening hoping for great food. i ordered the beef pho. asked for the sliced steak and requested it be put on the side rawas i dont like it cooking in broth. also was surprised that the condiments like cilantro sprouts etc arent served on the side said ok as long as they are just put on top. my meal arrives first thing i see is cooked steak inside the soup, doesnt look slices either just chunky like pieces. i question it oh i asked for it on the side and was told oh our customer said they want more flavor so we cook it first now . not what i asked for im thinking i was specific on what i wanted i probably wouldnt have ordered a different dish if i knew this prior - so i was like ok ill try it. so, it summary, wasnt my favorite pho ive had, i missed the tenderness of the raw sliced beef which is way better than the cooked imo, the condiments were soggy in the broth, it missed the freash taste of cilantro, the crispy sprouts and i didnt even see any thai basil in there. the broth was ok, a little salty if anything . i understand that this is supposed to be the modern twist on vietmanese and it wasnt horrible, but given it was missing some of my Favorite key things i love about pho i was disappointed. given some changes made it could be a great dish but at this point i wouldnt order again. im sure there are other great things on the menu and this might be other cup of tea but...
