The pizza from this truck was better than SO many restaurants in LA and Chicago that I’ve waited, dined in, and paid way too much for. I knew as soon as I saw the menu that they knew what they were doing and that it was going to be authentic. I saw the press inside, how my pizza came out in under 5 minutes, and heard that the flour is from Italy — and could taste all of that in the first bite. I’ve had pizza in Italy this good and couldn’t believe I was having comparable dough in Montana. It was chewy, crispy, not overloaded or soggy, and perfectly done. Read moreHad the pleasure of grabbing a pizza from Fire and Dough at a festival, and it was seriously impressive. Even when they got unexpectedly backed up (as happens at big events), the team stayed cool, moved fast, and kept the pies rolling.
Watching three people work in a small trailer—easily over 100°—was incredible. They ran like clockwork. You could see the teamwork, skill, and genuine care for the food and customers.
And the pizza? Crisp, chewy, fresh, and full of flavor—everything a Neapolitan pie should be.
