Lately I’ve been seeing a lot of videos of people scarfing down birria tacos and birria ramen, and I’ve been really curious about them. I'd never had birria before, actually just learned about it, and it just looked so good.
Well, my curiosity was finally satisfied yesterday. I spotted a little food truck 5 minutes from home called 𝑄𝑢𝑒 𝐶ℎ𝑖𝑙𝑒𝑟𝑜 and stopped.
I got the Deluxe Birria Combo (two tacos and a container of ramen). And all I can say is, if birria is acquired tastes, I got it after one bite! The food was absolutely delicious. I should mention I don't like cilantro and asked them to please go very light which they did. The birria was so rich and flavorful, very well spiced — not hot — salsa's on the side so bring the heat up to the level 𝑦𝑜𝑢 like. The tacos were full of tender beef birria and cheese and the consomé was loaded with meat and cheese, too. Best ramen I've ever had bar none — oh, my gosh the ramen! And the portion was generous enough for me to have two meals. So, if you’re in the area and see this little food truck, do yourself a favor and stop. Read moreI thought it was great! We tried a little of everything - pork in the burrito, chicken in the quesadilla, of course the birria tacos, and i got a plain corn beef taco just to try it. Everything was very well flavored and I'd say the prices are reasonable considering it's so fresh and homemade. The red/orange and green salsas were great. Tortilla on the burrito and quesadilla tasted homemade (i think i read somewhere that they do homemade tortillas?). I was a little nervous trying a food truck but getting it delivered and everything was pretty spot on. I will 100% be back and try different things...I've got my eye on the birria pizza...i'm sure that is to die for! If you haven't tried...

Cons: Believe the reviews about the food being bland. This place would be perfect for someone that has sodium restrictions bc it doesn't taste like they use any salt. This is the first time I've had bland street tacos, and I'm wondering if the location is the reason. The Mexican rice needs work, it had 0 flavor. The chicken & pork tacos need salt, unless you prefer the taste of the "meat" itself. Would've been 4 stars if the tacos and Mexican rice...
