Nestled among the usual hustle of food trucks, Tradición stands out not just for its flavors, but for the soul behind every bite and sip. From the moment we arrived, it was clear this wasn’t fast food—it was food with a story, made with love and authenticity.

We started with drinks: a strawberry lemonade and horchata. The lemonade struck that perfect balance of sweet and tart—refreshing without being cloying. But the horchata… that was something special. One sip brought me back to childhood, to the first time I ever tasted this comforting, cinnamon-kissed drink. You could tell this wasn’t a powdered mix—it was made from scratch, with patience and care. It had a smooth richness that never overwhelmed, harmonizing beautifully with the lemonade. Each drink stood on its own, yet together, they spoke the same language of craftsmanship.

Then came the flautas—crispy rolled tacos filled with tender shredded chicken and topped with fresh lettuce, crema, queso fresco, and salsa (extra served on the side, per my request). The shells were extra crispy, fried to perfection without being greasy. The house-made salsa had a whisper of sweetness, a subtle touch that elevated every bite. Honestly, these were the best flautas I’ve ever had—the kind of dish that makes you pause mid-meal just to savor the moment.

To top it off, Alfredo—the chef and creative force behind Tradición—not only built his menu from scratch but also handcrafted the benches outside the truck. Even more impressive, he completely built the entire food truck by hand, and it looks like the most high-end, thoughtfully designed food truck I’ve ever seen. I had a tough day at work and my friend and I couldn’t decided on what to eat.Then, I saw a review that someone had the best horchata here, so I decided to give it a try. When I tell you that this is probably the most authentic Mexican food you can get, I’m being serious! To top it off, they also have amazing customer service. You can’t be in Houston and not give this place a try. My day went from being Horrible to being happy just from eating the food! This place will always be one of my stops when I’m on this side of town! BTW the Horchata is definitely top Tier WITH ALL the food...
