I'll start this review by saying your experience might be different if you go a bit earlier on Sunday for the buffet. I arrived there a bit before 2pm, and it ends at 3pm.
That said, there wasn't a lot of food on the buffet, and several of the foods were dry and didn't seem fresh. Four or five of the pans (out of around 16) had between zero and three items left, and several appeared to be enchiladas or chimichangas (the ones I mostly wanted).
I tried a few different things on the buffet, including the refried beans, some of the enchiladas, and the steak fajita mix. The steak fajita toppings were pretty good, but basically everything else was "meh". The refried beans had no flavor or texture, and all of the enchiladas I tried were also pretty bland. Even the sour cream was bland.
I know I came toward the end of the buffet time, but I still expected there to be more food available than what there was. There were plenty of chicken nuggets and chicken wings, but I don't go to a Mexican restaurant when I have an appetite for those. I think the best fix for most of the food I tried is simply seasoning everything. Add some Sazon Goya to the refried beans or something. Put some taco seasoning or chili powder in the meat when you cook the enchiladas.
As for the service, I was there for close to an hour and a waitress stopped by my table one time to refill my water. There weren't many people there and it was NOT busy, but nobody checked on me to see if I needed anything, or if the food was OK, etc.

We stopped in about an hour before they closed for a meal on a trip through town. We were curious about a Mexican restaurant we didn't recognize, and it's become our new favorite for the Kennett area.
I had the Birria Tacos. They were exceptional. The flavor was full, the broth was delicious and the tacos were crisp but not crunchy until dipped.
My wife had loaded fries (loaded with chicken and cheese). She loved it. I tried a bite and the chicken was well seasoned, tender and cheesey. Luckily the fries were also decently crispy as well.
My daughter had a chicken and cheese quesadilla and she liked it enough that I didn't get to try any.
