As a chef I had high expectations for dinner, and I was so horribly disappointed. The restaurant itself is gorgeous and given the location on the access road, I was happy that finally there was someplace nice to go. I was wrong. The waiter brought me a menu from last week's listing and had to bring me a new one. The white wine was warm, not even chilled. Never in my life have I seen white onion soup. It doesn't exist! It was basically onions boiled in water no taste whatsoever with just melted provolone cheese. Why no gruyere? Onion soup is supposed to have a brown cheese crust. This one didn't. The main course was chicken cordon bleu which was completely raw. Not even seared, not even fried, not even baked, just raw. I called the waiter and gave it back to him. The Chef then came out and apologized. I was numb as to how this could have happened, I asked him, and he had no answer. Mind you, I came at 5:15 and was the only one there for dinner with the exception of a few people at the bar. The sauteed zucchini was just that... sauteed zucchini, no salt, no pepper, no herbs, no tomato, no garlic, nothing. I asked for some bread and butter, and they brought me these white undercooked rolls with melted butter! Are you kidding me? To make up for the raw chicken, they brought me a plate with some charcuterie, fruit and cheese. I gave it back because they didn't even bother to take the casing off the meats. They brought back the cooked chicken, which they had cut one piece in half to see if it was done. No thermometer? Bad move. They asked if I wanted dessert. I said no. The hummus needs some work—it lacks tahini, which should be closer to a 3:1 tahini-to-chickpea ratio. Also, consider serving it in a wide coupe bowl for easier dipping. The pita was overly crunchy when it should be soft and pull-apart.
The water in the bottles could use better filtration, but I appreciate you providing Saratoga water after we pointed it out. The bread on the Godfather sub was old and so tough that it was difficult to eat.
On a positive note, the wine list is excellent—loved the Kistler selection. However, investing in better seating and lighting ($50-80K) could truly elevate the dining experience and help sustain the business long-term. Upgrading the silverware would also make a difference, as the current forks feel cheap.
