We all know how to make a basic American Breakfast, right? Maybe not, but it's sincerely not a difficult thing to truly master. Cook some meat, if that's your thing; fry an egg on a hot pan to your liking, toast some bread and enjoy. Stir up some pancake box mix and get fancy with those, if thats your thing. Sometimes we, as lazy humans, don't necessarily want to put in the effort. If you're anything like me, I work, I mom, I learn, I play hard... I'm not in Suzie Homemaker DIY Mom mode as often as I'd like to be. I have never been and will never be above paying someone else to cook for me, when the mood strikes. Especially the easiest meal of the day, breaking the fast, the classic American way. It doesn't matter to me if you work at WackArnolds or Cindy's in Downtown Chicao. I'll pay and I'll always hope it hits the spot. When it doesnt, well, that's probably what I paid for. I knew I wasnt expecting perfection but I knew it would just work. When it's really great, well... amen #nailedit. For me personally, the pinnacle of a good American Breakfast goes something like this:
Enter a humble corner cafe in BFE, America. A friendly server seats you in a little plastic and wooden booth, up against the wall by the coffee maker and hands you a folding plastic menu and a water. Pepsi place? No big deal, just coffee and water for me. The Country Skillet come with "house potatoes" which is just quartered baby yukon golds or fingerlings, perfectly roasted in a cast iron skillet with butter, onions and bell peppers, and the PERFECT amount of salt. Cover those babies with CHOPPED UP chunks of expertly-seasoned country fried steak. Yep. They did that part for you. Now cover that with some cheddar cheese, perfectly melted by the warm sausage gravy poured over it. Top the dish with two perfectly cooked over-medium eggs. The bottle of Cholula is never out of eye sight but that's not at all necessary. I do it for the heat, mostly, but nobody can deny the flavor enhancement it provides. I always eat about half of my meal with it and half without. Don't judge me. And because I do truly love myself, I have a half-Belgium waffle on the side. This mf is perfectly crispy on the outside, even after the melted butter penetrates it like.. well, you know. The inside of the waffle stays fluffy and flavorful. Dipped in some maple syrup, it's the perfect way to end the feast.

The owners here run it like it's a next-level brunch spot but with the menu offerings and prices of a humble Luke's Diner like the one Lorelai and Rory would visit. Lincolnway Cafe is honestly done so PERFECTLY, with dishes prepared flawlessly and quickly. Nothing compares to it. They kill it with fantastic American Breakfast options but don't overlook the Mexican favorites. They have food options for all the vibes of the day & its all fu*king delicious. So, pay them to make you breakfast or lunch. You won't regret it.
