Dumpling Generation, located inside the Town Center at Lake Forest Park, offers a selection of handmade Chinese dumplings (chicken, pork, beef, egg or vegan), steamed pork buns, rice bowls, and soup noodles. Most dishes are priced between $10-$20. I loved that the noodles and dumplings are made from scratch — the texture and flavor are great, and you can taste the freshness.
The staff were very friendly, but when I ate here recently, there were a few downsides...
The dumplings are served on a paper plate instead of in a traditional steamer basket, which caused them to dry out quickly and stick to the paper liner. This made them a bit difficult to eat. They also don’t offer the classic fresh ginger with vinegar and soy sauce for dipping, which is needed to enhance the dumpling’s mild flavor. (If they made a few adjustments, the dumplings would be fantastic!)
We also got the pork belly soup noodles to go, and I appreciated they boxed the noodles separate from the broth so they didn’t get soggy. I don’t think this kind of food travels very well, but my daughter still enjoyed it.
They also offer a selection of hot teas and iced milk teas. We got the taro blended milk tea with boba but it was chalky and isn’t something I’d likely order again.
Despite these minor drawbacks, the food was still good, and it’s a convenient spot to grab a meal when you're at the Town Center or visiting Third...

I haven’t been to the original location in Edmonds, but was told by the friendly and peppy cashier that the Edmonds location has a much bigger selection. The selection is somewhat limited, but it’s probably about the right amount for a food court. They offer the chicken dumplings as well as rice bowls and bubble tea. I ended up splitting the chicken dumplings and the beef rice bowl. The beef rice bowl was pretty good – the stewed beef had a good Chinese braised spiced beef flavor. I was a bit disappointed they used short grain rice though and would prefer jasmine rice. The dumplings were the highlight and it makes sense the place has dumpling in the name. The filling had a lot of chicken flavor with slight sweetness and the dumpling wrapper was cooked perfectly. My main constructive comment would be to serve the food on a different type of compostable container or maybe melamine plates. The issue was that the dumpling wrappers and the rice would stick to the containers and when taking the food off there sometimes was paper residue on the food. I ordered the Pork Soybean Noodles. For $16 I got some "pork soybean sauce" out of a warmer dumped on reheated noodles. Nothing was fresh and combined and cooked in a wok, on a grill, etc. A small pile of cucumber and edamame was on the side. The ground pork in the "sauce" was about as dry as sawdust and tasted like it'd been sitting in the warmer for two days.
