I don't usually write bad reviews but this one is an exception. We visited in 8/31 on a Sunday around 5:40pm. We got seated by the hostess on a far last corner on the right side of the restaurant and gave us the menus. As we looked at the menu, we were ready to order within 7 mins in we got seated. We had a waitress named Rosanna or Roxana and we were not very happy with her service.
She introduced herself at first and asked for our drinks. Then, we told her we were ready to order and she said she would be back. After about 10 mins, two gentlemen sat on the table next to us. 26 mins after we told the waitress we were ready, she takes the order of the two gentlemen next to us. After she took their order, she turned around and apologized to us. I asked her if we could order now and she proceeded to take our order.
The table next to us got their food first. Our table didn't have any silverware or napkins. It took her for lever to get us refills. It's been over an hour to get our food and the gentlemen besides us are almost done eating. We got our food finally after 1 hour and like 7 mins. The dish I ordered was the Tres Bandidos which includes 1 pork enchilada in green salsa, 1 beef enchilada in red sauce and 1 mole enchilada. The "mole" enchilada tasted like rancid super sweet sauce and it was very discolored. When the waitress came back to see how the food was tasting, I told her to come back and ask again in 10 mins as I pushed my plate to the side. She literally laughed! Turned around and left. I told my boyfriend, What was that?! She didn't even ask what was wrong or anything. When she came back to see if we needed boxes or the check, I addressed the problem with my dish, she told me that's how the restaurant made their food and all the foods are different in different places. She was like, What do you want me to do? So I told her to talk to her manager. She came back saying there was nothing they could do and gave us the check. I couldn't even finish the plate because the sauce was spread over to the rice and a little but towards the beans.
It would've been nice, if we had gotten our food in the order we came in. The waitress could've done soooooo much better if she received the appropriate training. She's far from paying attention to the customer and keeping up with order of tables. She needs to be trained, she has the potential but the service we received is far...

We were seated just after the dinner rush; it was our first time there. A nice man came over and closed the window blinds, which we appreciated. He said “Better?” to us, which I smiled and replied, “Yes; thank you.” The salsa prep person came over and made the salsa; it was decent. That was it. After just under 40 minutes of waiting, we never received a glass of water, and no one came to take our order. We decided on patience, then decided to leave. In our opinion, no service is worse than poor service, which reflects weak management, which in turn is bad for business. Neglect of patrons, particularly new ones, merits an equitable single-star rating. We will not return, and will share this experience with others.
Around a year later, we returned; no other nearby Mexican restaurants were open on a Monday, so we hesitantly tried this again. Unfortunately, our single star review stands. There was no one at the front to seat us when we arrived; we could see the hostess chatting with the cooks in the back. We waited patiently, and 5-6 minutes later, someone came to the front. Not a strong start, but we were continued to give this second attempt a fair shot. The cadillac margarita was weak (and expensive; over $17), and no refills on our soft drink despite 5 passes by our table (and us asking for a refill as well). What a disappointment…again. This restaurant has a nice atmosphere, but the service is deplorable, the drinks weak, and the food average. We do not recommend Guadalajara Grill, due to repeated bad experiences a year apart, and management that fails to respond to constructive, articulate criticism. This indicates apathy and indifference, two attributes that we will be sure to impart to all of our friends about the service at this sub-par establishment. This is the best Mexican restaurant. I’ve eaten at in at least five years.
Francisco, the manager, came over and introduced himself. He was very friendly, as were all of the staff. They were quite busy for a Thursday evening, but our food still arrived on time with a Great presentation, and, Best of all, it was an absolute gastronomic delight.
The core of the restaurant is very pleasing, and it makes you feel like you are in Mexico
The very best thing, however, is the salsa. The salsa at Guadalajara is unlike any you will get anywhere else. It is made fresh table side at whatever heat level you like, and is made from 100% fresh ingredients. The tomatoes are fire roasted in their own ovens. The peppers that they use come from a local farm. Everything about the process and presentation is top notch. This level of service is normally reserved for five star restaurants and above.
Here is possibly the best part.
My wife and I had two meals, an appetizer and dessert and brought home enough food for two more meals meals -for EACH of us-and our entire bill was still under $60, including one margarita.
