I recently had the pleasure of dining at Saint Blaise, a charming establishment that perfectly blends elegance with a quaint, intimate dining experience. Nestled in an ideal location, the restaurant is easy to find and serves as an excellent choice for both casual meals and more intimate date nights. Ambiance: Upon entering, I was immediately enveloped in the warm, inviting atmosphere that Saint Blaise offers. The décor is thoughtfully curated, seamlessly blending Art Deco influences with contemporary elegance. A stunning emerald granite bar top stands out, embodying the geometric shapes and symmetry synonymous with Art Deco, while maintaining a modern sophistication. This fusion creates a space that feels both familiar and luxurious, offering an ideal balance of charm and class. It’s the kind of place that effortlessly makes guests feel at home, while also exuding an air of refined elegance. Service: The service at Saint Blaise was truly impeccable. The staff demonstrated a perfect balance of attentiveness and warmth, ensuring every need was met seamlessly, without ever being intrusive. Our server, Lauren, was exceptionally knowledgeable, offering thoughtful recommendations and taking the time to thoughtfully explain the menu, which greatly enhanced our dining experience. Additionally, Lee and Emilio’s periodic check-ins, marked by professionalism and genuine warmth, contributed to an atmosphere of hospitality that made our meal truly memorable. Food: The food was, without a doubt, the highlight of the evening. We started with an array of appetizers: Pigs in a Blanket, Beer Cheese Fondue, and my personal favorite, the School Haus Frito Pie. Each dish was freshly prepared, bursting with flavor, and beautifully presented—comfort food elevated to its finest form. For the main course, I opted for the Gnocchi with Bolognese sauce, which was thoughtfully crafted. The dish was beautifully plated, with the gnocchi light and tender, perfectly complemented by the rich and savory bolognese. The portion size was just right, offering excellent value without overwhelming. Cocktail Pairing: To complement my meal, I paired my dish with the Holy Grounds cocktail. This expertly crafted drink is a delightful variation on the classic espresso martini, infused with a unique Haus blend that adds complexity and depth. The subtle, rich flavors of coffee combined with the smoothness of the spirit created a refined yet refreshing drink that perfectly complemented the flavors of my meal. It was a truly remarkable cocktail, providing an ideal finish to the evening. Final Thoughts: In conclusion, Saint Blaise offers an exceptional dining experience, with outstanding food, top-tier service, and a cozy yet elegant atmosphere. The pricing is perfectly aligned with the quality of both the cuisine and the overall experience. With its intimate seating arrangement, the restaurant provides a more personal and serene atmosphere, making it an ideal location for adults seeking a peaceful evening away from the bustle of daily life. I would highly recommend Saint Blaise as a child-free dining destination, where guests can enjoy an evening of relaxation and culinary excellence. Saint Blaise evokes the sophistication of a big-city dining experience, without the travel. I will certainly be returning, with brunch next on my list.

There are not many choices in Midland/Odessa for nice dining especially when looking for a place to take a customer or work colleagues. I am very happy that I found Saint Blaise as they hit all three of my marks for restaurants that I take customers to. Food: The food was great. I wanted to get the steak and potatoes but it was $50+ which I thought was a bit steep for just steak and potatoes. I opted for the blackened salmon which was cooked perfectly with delicious broccoli and mashed potatoes on the side that were also cooked perfectly. The gnocchi had a perfect consistency with a non-overwhelming sauce so also phenomenally done. The two drinks I got: Same Place and Maple Manhattan were well-made with each component complementing each other well and not overpowering one another. If you like tequila and manhattans I think you will be happy. Service: The servers were very attentive and made sure we were taken care of the entire visit especially with the waters. Huge kudos! Ambiance: I will say because the inside space is a bit tight and small, having conversation when the restaurant was busy proved a bit difficult but if that is the case they do have seating right outside in the lobby area and having conversations there should not be an issue. I will make sure to be back with customers here!

I made a reservation a week in advance to meet with a very special friend who I wanted to make feel special. I had a lot of expectations because of the pictures and the other reviews. When I arrived I realized the restaurant is in the entry lobby of a business building but I said "ok. This is different". When I asked for my reservation the hostess pointed out that I could sit in the outside that was hot or at the bar. Which my reply was.... But I made my reservation a week ago. They accommodate me and my friend in the middle of the path. It was cooler inside so we stayed. I decided to let that one fly because I was like Ok at least they're trying. Next I noticed how the main manager was dressed. This is like a 20 year old kid that was dressed in 1990 jeans and a white t shirt. For the bill that I payed I would of expected for the manager to use regular pants. But oh well maybe I was been too judgemental at that point. The bartender prepared a delicious cocktail and I enjoyed that. The appetizers and mail meal was lacking and through the whole night I was feeling rushed to get out of there. Well I left a good tip anyway. My friend and I were graciously allowed to sit outside with our drink since we were obviously in everyone's way. For two people I payed 120 USD and 20 USD tip. You tell me? I believe I wouldn't not made this post if they would have respected my reservation in the first place. So I guess I didn't let that one fly. I am going to go again. I am gonna give them another chance cuz they're local. I am going to go with my husband and see if they treat me...
