Went for dinner with my wife. We were looking for Mexican fare and thought we were going to the last restaurant that occupied the space.
There was enough Mexican on the menu to satisfy what we were looking for. My wife had the enchiladas mole. Very well done mole with a deep, rich complexity to the sauce. Hit that out of the park. Just really good.
We ordered pork nachos for an appetizer. The choice to use cheese sauce was odd. Just don't see that at a legit restaurant. Maybe the roller rink or ballpark. Like cheese out of a can... I can appreciate that sort of thing in the right context, but it really doesn't fit the vibe of a made from scratch sit down dinner.
I feel the urge to say something about ultra processed foods. They are pretty much poison. Almost impossible to avoid and the labor that has to go into not eating ultra processed foods is pretty high. It is a basic expectation that an $80 dinner for two won't have ultra processed 'anything' in it. This is part of what I am hiring you to do at a restaurant is the laborious part of avoiding ultra processed foods... Otherwise I could just go get queso from Chipotle. Or from a can.
I ordered a chimmichi pork. It was overcooked, maybe even reheated in a microwave. Chewy. The chimmichi was very good. The rice was delicious.
So, pretty mixed experience. The wait staff was terrific and friendly. I think I want to give this place another chance. Maybe for breakfast?! Much like the odd signage situation I had no idea that this place does a breakfast service. Have to say from the pictures on Google it appears like the breakfast fare is much more cohesive and the execution looks good.
Oh, the lemonade was a stand out. Really terrific.
And the porch is great. Truly a great space.

Googled something close and was surprised to see Fusion Pancake House! Reviews were great so my friend and I decided to head on over. From the moment we entered, the atmosphere and the decor was absolutely spot on! I loved the vibe it gave off and the employees were so friendly upon entry. I was so surprised to see Machaca on the menu. I myself am from Sinaloa Mexico, and we love some machaca!! So I went for it and got the huevos con machaca and our server was so incredible! She made me feel right at home. This dish also came with the option to choose from pancakes, toast or fresh fruit, and I wanted pancakes! They were so light, sat so comfortably after eating! The salsa that came with the main dish was phenomenal and I’m super picky, I’ve never found anyone’s salsa in Minnesota to be so delicious the way I enjoyed their salsa! Again I felt right at home. My server even brought me tortillas so I can enjoy my dish the traditional way🥹 my heart, I felt so whole eating here. And the mimosas!!!! Freshly squeezed orange juice! I was left in awe after taking the first sip. It was so fresh I loved it. The host/hostest made immediate eye contact, signaled “two”, I signaled back, and we were seated. I mention this because it shows how attentive they are. We were offered coffee a few times during the meal, water was always full, and they recognized when we were ready to order and pay the check. So the service was A+++.
Food was incredible. My wife always gets Huevos Rancheros at most breakfast places, and she said it was the best she’s ever had. I had eggs, hashbrowns, and bacon. And we ordered a pancake because we tend to “rank” pancakes at breakfast places, even though we’re not particularly partial to pancakes.
Anyway, it was all incredible. The pancakes weren’t giant and hugely “americanized”, they were favorable, slightly moist, and had a good texture. It didn’t leave us weighted down at all. They are one of two pancakes in our top tier — I would 100% get them again.
Eggs, bacon, and hashbrowns were also top notch. Eggs were perfectly cooked (scrambled), not dry, but not sopping wet either. Hashbrowns had a nice top layer of crunch, and very tasty. Bacon was thick cut and almost melted in your mouth.
10/10 for the food. And again, none of it left us feeling “bleh” or anything. It was filling, tasty, and not bog-downable.
It’s a unique vibe as well. We really liked it and my wife “loved” it as she’s much more of a vibe person than I.
