The definitive place to get waffles.
While ordering coffee at 7 Brew, Emily and I were hungry and needed somewhere to eat. She picked two places and I took a coin and flipped for where we would go. The Waffle Company won the flip, which was convenient as it was right next door to the coffeehouse.
Walking in, it's kind of a janky place. Pure white walls with random assortment of things hanging up on the walls. I didn't have high hopes between the janky parking lot and the odd interior but we sat down and ordered anyways.
I got the Bacon Caramel Waffle and upgraded it to a combo (I think that's what it was called) which included bacon, eggs, toast, and those little delicious potato chunks. Emily got the Mexican scramble.
Within the first bite, all my trepidation and hesitation fell away. This was perfection. The waffle was every bit bacon, caramel, and delicious from first bite to last. The sides were super delicious as well. Eggs cooked just right, potato chunks full of flavor, toast neither too toasted or almost raw. Bacon was bacon, I was on a bit of bacon overload between it and the waffle.
Emily really liked her scramble. I tried a bite and it was hot hot hot. It had an unreal kick to it that made me wonder how she put it down without breaking out in a sweat.
I think the final tab was around $30 for both our meals, which I would've paid double for how good it was. The Waffle Company is... and I don't hesitate to say this... the best breakfast I've ever had. This just goes to show that you can't trust appearances for how good a place is.

There's minimal signage which makes it easy to miss but you'll be glad you found it once inside. With somewhere between 12 and 16 tables, seating is ample but not crowded. There is a wheelchair ramp from the parking lot to the side entry door giving mobility challenged persons easy access.
Wait staff is attentive and friendly, sharing their workload so everyone is taken care of properly. I can say I did not have to ask for more drinks or condiments. These ladies are the quality of service example other restaurants should strive to achieve.
I chose the Mexican Scramble: a plate of 3 eggs, sausage, chorizo and veggies served over a bed of hash browns, topped with Monterrey Jack cheese. To my taste, the chorizo was very mild. My waitress did bring hot sauce so I was able to adjust the spice level to my liking. (Did I mention their attentive wait staff?) The food is quite good. Portions are an excellent match for the price and certainly filling. For drinks, I chose coffee with my breakfast. The coffee is a tasty blend but I found it to be a little on the soft side, typical of restaurants in my area.

Places like this are a mainstay in Texas - small, inexpensive, diners that stay open until two and serve only lunch or breakfast. Here in southern Illinois they are a bit of rarity, especially with the absence of a Waffle House. Thankfully waffle company scratches that itch, although slightly more expensive than I'm used to paying back home.
I almost always order the waffle combo. Giant Belgian style waffle with a protein, a starch, and some eggs. Perfect amount to fill me up and only $7.50.
They often play golden oldies - doo whop, sock-hop, style rock and roll that you pretty much need a Sirius subscription to hear anymore. It reminds me of my dad, which makes me feel fondly nostalgic.
Wait staff gets the job done. My litmus test is painfully simple - don't hover, keep my drink full, and serve me the bill shortly after it's clear everyone is done eating. They do just fine.
Way better than huddle house (almost always poor quality food at a higher price point) and comparable to I-hop but cheaper. An oasis in a desert of subpar breakfast...
