We know that as restaurant and bars are trying to survive being very new. My review is based on common sense and general ethics. The venue atmosphere and everything around it is very appealing to an urban cowboy eye, it has 3 levels of business. Let’s talk about the food, skirt steak both of our steaks we requested medium and there is no pink in the meat. The onions were caramelized different from my wife’s and mine. As you can see in the photos there are no steak knife’s. One server was saying we don’t have any. I asked for a side because I am paying $38 for a plate with no sides. They ran out of Brussels sprouts at 6:30 when they open at 3pm. The drinks, I ordered a smoked old fashion and I ask about training as a waitress to smoke an old fashion because she let it smoke less than 30 seconds. The waitress said she wasn’t trained on smoking an alcoholic beverage though she shouldn’t be trained as a waitress because that is the bar tender duty. If you want to add a salad because they don’t have enough sides we can’t order a salad from down stairs because we are on the second level but they will take the money. And lastly let’s talk about the VIP price, which some people must have paid the 2-4k, but when you have to purchase your a bottle from the people that have the locker seems outrageous and doesn’t make sense number wise. So let’s talk about the band hauling their equipment up the flight of stairs 20+ feet when the facility charges a lot of money for food and VIP and there is no elevator working for them at least or if there are disabled patrons that want to enjoy the music? Look guys The Venue looks nice. Everything is set up good there’s a lot of employees and staff going around whether they’re trained or not doing their job or something else who’s to know? Parking is really crappy around here and it seems like nobody from the first floor works with the second or third floor everybody’s kind of independent. I would like to see this thing survive. It has great potential but it needs a much more on training and sharpening skills with food and staff services. Alex was a great help on getting seats. Tiffany was the overall manager for the facility, she was very understanding. We drive a hour away to come to this and please family that own red stag listen to the management so that the issues are resolved. Cowboys and Cadillac are not ADA compliant. Good luck to this facility.

I was expecting the food prep and delivery to be just as nice as the upscale decor. I was let down from start, to finish when it came to the dining experience. Don't be tricked by the façade, this will definitely be a known as a tourist trap if they don't make some changes. Appetizer: Stuffed mushrooms, the venison was not thoroughly cooked, all 5 were still raw. They did offer to make us a new batch, but we were already disappointed, so we declined. Cadillac Cheese Board: The only thing worth buying if you ask me. Cheeses, meats and nuts were great! $55 Crab Rolls: Two small (3 inch) rolls, stuffed with mediocre crab salad, the flavor was below par. The rolls were not toasted, they were burnt. Honestly, that was the worst $29 I have ever spent. I mean maybe add a side of some sort, like chips or fries. The presentation was absolutely WEAK. It was so bad, I only ate one. Thanks for my $15 3inch roll. SMH!!! Prime Steak Rolls: Looked appeasing from what I could see. I asked how they were and I got a simple shrug of just acceptance and nothing more. He said "Meh!" $26 Skirt Steak: Steak cut up on onions and bell peppers. Nothing more. "So literally just a steak on a plate?" "Yes, mam" I asked my friend: "Did you like your steak from yesterday? Was it good?" "NO, it had no flavor, it was just boring. Honestly, nothing to rave about!" $38 Food: 1/10 Glassware: 10/10 Drinks: 6/10 ($13 frozen margarita from a machine in a small 10oz glass) - WTH? Ambiance: 10/10 Charcuterie Board: 10/10 Aesthetic/Ambiance: 10/10 Outside Seating: 6/10 (how are you going to keep people from frying in the summertime - I'd start figuring it out now. Thanks for the first TAN of the season though.... And there you have it. I did not take pictures of the entrees as they were not even picture worthy - the presentation needs work, especially being "fine dining" as they promote. SMH- overall it was a waste of $250. At this point, if you are going to this establishment: GO FOR DRINKS - not the food! You are paying for the ambiance - that's why everything is so expensive. Not FINE DINING at all.

This is a MUST go. Unique. No other place like this in NBTX!

The staff, service, layout, decor and atmosphere are outstanding. The entire staff cast a vibe of PMA and energy. The live music was excellent. The stage and acoustics were such you could enjoy the music AND still have a conversation .... imagine that!

Multiple floors, multiple levels with many nooks and seating areas inside / outside. Multiple grand bars, a huge fire pit. An Airstream trailer, lifted up from the street to the roof, provides a very special take on a "private party room". Many, many spectacular seating spaces. WOW to the decorator and decor .... who was their decorator?

Just two weeks in and it is amazing the path they are already on. They are doing an outstanding job finding their way, identifying what works ( bars are spectacular ) and what needs a tweak ( lighting on outside steps ). Cameron the owner and George the GM, proactively approached us warmly, solicited input, listened for our responses and showed a genuine sincerity for our feedback.

CC WILL become a "destination" in New Braunfels.... no doubt.

Fun fact......who DID play a role in creating the opulent vibe, the eye catching decor of CC? Cameron's landlord! What? Cameron's landlord is his mom, Shaina. For your background, Shaina owns the Red Stag. If you have been in the Red Stag (the corner store. below the CC) you KNOW Shaina's creative eye and warm customer service. We purchased a beautiful hand crafted, rustic, vintage, Belgian credenza, from Shaina. When you go into the Red Stag and see her merchandise, it is easy to see her "finger prints" all over the decor of CC.

As a family operation, George played a role in the "logo" of CC's. When you go to CC's, ask the question, " your CC logo, a "sleeping" cowboy, his grinning dog, on a horse, what's up with that?" The answer will make you smile!

As recent refugees from Chicago, we appreciate the ongoing, well thought out, creative development of the downtown area. We look forward to the new boutique hotel and restaurant being developed on the roundabout as well as the renovation of the old flour mill into a beautiful retail, music and restaurant space. Both these developments are outstanding projects, which like CC's, will pump energy and revenue into the local economy while keeping the "Mayberry feel" of our beautiful scenic downtown.

Well done CC's, you are off and running and doing GREAT. We look forward to the tweaks you make in the coming months.

We will be back, you are our new favorite spot in NBTX!

Man I really wanted to like this place , I even went twice to confirm it wasnt just me. I sure hope the owner sees this and makes the improvements needed , because I can definitely see the potential. First, why is there a cover charge? nothing about this place is that popping or exclusive that there needs to be a cover charge that you tax, and then ask for a tip before any service is rendered 🤦‍♀️, cause at that moment I’m the only one putting in work. Annnnddddd if it’s to pay the band or to cover the cost of the preformer for the night, then those cost should be worked into the menu items. Second, dang those stairs!!!!! … we should be greated by a super happy face after u do a small cardio workout, instead we are put on a waiting list to twiddle our thumbs until they seat you. Side note: my friend called to make reservations and was told that they didn’t do that. Well clearly ya do, there was reservation signs all over the place! Fast forward to the meal , for New braunfels not bad , but did y’all really think the concept through? How will I eat this food in the chairs that are literally sucking my thighs through each hole? you’re sitting so far back from the table, its really not ideal at all for eating at those tables , you would almost have to eat on your lap, like at a backyard bbq where these type of chairs are usually found. The server should have introduced herself, explained the portions, maybe tell us what she personally enjoys or what’s popular and how y’all intend for the dishes to be shared , so that the guest don’t over order.there should have been silverware provided before the meal or with, and we should have been checked on after to ensure that we had everything we needed. This is how you make that money up at the door!!! (I am also aware that this could have just been this server , and maybe she was new, or had an off moment after back to back large parties, but a good training would take care of that). Lastly, I hope y’all thinking ahead , come next month the sun 🌞 will be so hot you may just die up there. There is zero shade, just you and the sky baby!! Anywho after I say all that I must end on a positive note, Allie made an amazing espresso martini on the 3rd floor, I recommend getting the chocolate cake for sure 🔥, the feature band was great and my girl Ella is the best, her smile can make anyone’s day. If you happen to go anyway despite my warning hopefully you get blessed with this wonderful soul...
