Phở NB — Restaurant in New Braunfels

So I visited about a week ago and I have to say I look forward to my next visit. I arrived around 5:30pm and even though they were busy I was promptly seated and waited on. My server was delightful, attentive, and patient as I took a while to review the entire menu. Oh how I wanted to try so many things as there is so much to choose from. However, I stuck to what know and vowed to return again and again trying something new each time. I started off with the egg rolls that came with lettuce, cilantro, sliced carrots, and sliced cucumber on the side as well as a fish sauce dip that I seriously could drink in a cup it was so darn good. I need the recipe, just saying. Unfortunately, I could not finish them by myself but this was not a bad thing as I enjoyed having them for lunch the next day with the extra fish sauce I got to go. 👍👏👏 Now four the main dish I ordered the vermicelli with pork and egg roll. Yup, more yummy egg rolls and did I mention the fish sauce. Sure you can pore the fish sauce over your entire bowl but I went ahead and dipped every bite in this mouth watering sauce as well. My tastebuds were on cloud nine. Wow!! Funny thing is the lady who also visited the restaurant for the first time next to me commented how wonderful the sauce was and wished she had more too. Hey just ask and they are more then happy to fill your need. I finished off the meal with some Jasmine tea and I was glad I did as it was something chilly outside. When I first moved here from the city of Denver I had high hopes for finding some new favs in NB and struggled finding AUTHENTIC Pho in town. The other places make their dishes from concentrate but here is from scratch and is SO delicious!! They have other authentic Vietnamese dishes as well and everything is made in house. I saw a review on here that rated them one star which after being a long time customer and knowing how the restaurant industry has SEVERELY been affected from covid, seems super shallow. They probably would have been willing to work something out for any mistakes and are super nice, extremely hardworking people. When people speak a different language (particularly one of Asian culture) and are super busy you cannot assume that they are being rude towards you. Sometimes when they’re speaking in their own native language it can sound that way but I promise you these are some of the nicest people I have ever met!! Take note that a lot of restaurants are incredibly understaffed because no one wants to work right now so be expecting a slightly longer wait time and tighter seating if you go during the busy times people!! Please be kind, if a mess up happens don’t completely bash them and risk ruining their business because small biz owners are already trying so hard to make a comeback. I visited this establishment last weekend with my family for our weekly dinner outings. We ordered a variety of items to see what this place had to offer, starting with the egg rolls which had a good filling and flavor but was a bit disappointed because they were slightly stale.

New to the Vietnamese cuisine we were unsure of what to order but our amazing server Will, suggested the grilled pork sandwich, and stir fried noodles. The sandwich had the perfect combination of flavor ranging from the savory meat all the way to the tangy pickled carrots, definitely will be recommending this

The stir fried noodles was unlike anything I’ve ever tried before and exceeded my expectations.

Last but not least, we ordered the stir fried vegetable noodles for my vegetarian sister. I expressed to Will my concern for cross contamination of meat and the importance of it not ending up in her dish, he went above and beyond to ensure no such thing happened which I am extremely grateful for and can say not many servers do so.

All in all I give this place 4/5 stars deducting a star due the the stale egg rolls which In my opinion are so simple that there shouldn’t be an issue.
