The pastries are lovely and getting things yourself with clean tongs is a great idea.
It takes a calendar year to check out. They have two cashiers on two registers which are packing each individual pastry in it's own bespoke bag. These people also make the coffee fresh for each customer as they order. There is one more person that should be doing those things but is putting out the pastries as they are made. This poor girl can't keep up with any of it, which means the lines are slow as molasses and if you are there any time after opening, the pastries are picked over and there isn't much.
