When I first learned that the Papillon Taco Guy moved in right after the last business left and saw that it was fairly popular and highly regarded in the downtown Papillon area, I was left intrigued for a while but finally found a day where I could eat there. For appearance (interior and exterior) I would say that I dig the art style and atmosphere. Despite the restaurant's small waiting room area, the interior is simple and welcoming, full of bright colors, a nice art mural of the shop and the surrounding buildings, and a few taco plushies and pillows to add in a sense of fun and comfort. The staff member who was working at the time was great. He took my order accurately (a Breakfast Burrito) and made it in fairly quick time. I also liked how you could see the guy make the food at the other side of the counter. The menu itself is very small in terms of selection, but I think that actually helps to keep things simple, so that way the shop can focus on making high quality meals, improve time efficiency, and keep costs low (at least, that's how I understand it).
As for the quality of the food, unfortunately, I can't say that it was great. Not even good, for that matter. It was decent for what it was, but I believe Taco Bell makes better breakfast tacos than that I had gotten. I found the burrito itself to be too slim, the egg tasting as if it was cooked for just a bit too long or too hot (you're supposed to continuously stir scrambled eggs at medium-low heat for several minutes to get the best consistency, texture, and flavor), and the veggies tasted like they weren't fully cooked. It just tasted lackluster, and I hate to say that, but it really was.
Now, granted, this was a special on the menu, so maybe this wasn't the best that the restaurant could offer, as it wasn't a normal menu item, but still, for $7, I expected something much more. As a matter in fact, I'm pretty sure you can get a $5 or $6 box at Taco Bell that holds multiple tacos and burritos with various different kinds of options for fillings.
Overall, I'm willing to give the Papillon Taco Guy another try, but this first visit truly was...

I have heard about this place but I had never stopped in, but today when I picked up my wife she looked at me and said I want a taco, so we decided to give the Taco Guy a try..
This isn't carne asada or al pastor or lengua.. It is a fusion of two cultural icons, tacos and smoked meat.
What we have here is classic Americana smoked meat, it is done to perfection with absolutely mouth-watering amazing flavors, it is then put on a heated taco shell and topped with deliciousness.
The chicken, the pork, the brisket, this is perfection and if you follow me you know I love Smoked Meats, and I can be pretty critical, with that said, hands down this is some of the best I've ever eaten.
This gentleman has a very interesting backstory, it is like his life let him down this very specific path but then gave him some hurdles to overcome as we all suffered with during covid.
This isn't some fast food chain, this is an individual with a dream that came to fruition. I have always been a huge supporter of buying local, if you are in the area, especially if you were one of my Google followers, go try all three tacos and see what you think.
And if you're not following me on google, get on board. LOL

Only one space to eat inside (a few outside but too cold for that today) we lucked out and shared the table with the owner Scott, who was super nice and openly answered questions. Anyway we ordered two coffee’s and two breakfast burritos. The burritos (food is made when you order) are 10-12 oz each and have zero potatoes (as a filler) which for us means more yummy stuff. A crunch to the shell and hot and steamy inside (cheese, meat and peppers). Coffee was hot and good w 30% tip $29.00. Previously we had their three meat taco special. Three tacos each with a different meat (chicken, smoked brisket & smoked shredded pork was our pick) light on lettuce but lots of protein and cheese. Another delicious meal that more than filled us up. Right on main street (North Washington) in old downtown Papillion, NE.
