For the uninitiated - the waffles this wonderful outpost in Squirrel Hill sells aren't your typical waffles. They aren't even your typical Belgian waffles. They are Liège waffles - a truly royal waffle that is unlike any other. Unlike American-style waffles, which can be whipped up in minutes using baking powder to leaven, Liège waffles are a labor of love, using yeast to leaven and needing time for the batter (sometimes two batters are needed to make these waffles) to ferment and become extremely flavorful. Pearl sugar is also added to the batter to give these waffles a wonderful sweetness that is powerful but not cloying. To make these at home is quite the process, and I'm glad to say that I will never have to for the foreseeable future, because Waffleonia makes a perfect Liège waffle every single time. These waffles have a deep and doughy flavor from the yeast. If you've ever walked into a kitchen when fresh bread dough is being worked, those wonderful aromas are all present in these waffles. The crispy, caramelized sweetness from the sugar rounds out the flavor profile, and you have a literally perfect waffle. Waffleonia also offers a lot of delicious toppings - from fruit to Nutella to chocolate and caramel sauces and ice creams, which are all wonderful. However when i went in and asked for one the young worker said yes, and when i asked for a slight modification he said it wasnt possible. Considering i had gotten that drink before several times over the years i was confused. He tried to explain to me the way they had “always” done it and asked “how many years ago” did i last get the order. I told him exactly how it was made and he essentially said i was lying, when I pulled up the website with the exact order listed on the menu he did not apologize. Luckily there was a manager there who told me they dont make that milkshake anymore. So i asked fkr a refund and instead ordered a waffle. The young man made the waffle but did not call it out or let me know when it was ready. Instead my friend and I were waiting for a while wondering why my order took so long. Once other people who ordered minutes after me started having their orders called i went and asked where mine was.
