Diverso — Restaurant in Ponce

I had an incredible meal at Diverso and would not hesitate to come again. This restaurant is small (about 15 tables) and intimate, with tables close to one another but not uncomfortably so. The chefs prepare food in a kitchen open to the rest of the restaurant, so you can watch the crew of three chefs as they prepare your food each step of the way, without filter or wondering how long your food has sat out. I enjoyed watching them prepare my pita, lamb, and hummus appetizer as well as discerning which of the entrees they worked on was my filet mignon. The wait staff was friendly and knowledgeable about the menu, but seemed to be stretched thin between several tables. Although there was a bit of a wait for our initial drinks and appetizer, service picked up after the first fifteen minutes, probably after our waiter finished taking care of other tables. I state with certainty that the food at Diverso was unimprovable. The lamb appetizer was tender and rich, salted and moist without being overdone or too oily. The fish entrée was flaky and tender with a sweet and savory pineapple sauce. My filet mignon was cooked to perfection with a dark crust and an incredibly tender interior that melted in my mouth. Our chocolate cake dessert was incredibly moist, with an incredible ganache, and a light salt finish. Diverso is an incredible restaurant with service, food, and décor will not disappoint. Diverso has all the makings of a top-tier dining spot in Ponce: a creative and delicious menu, quality ingredients, and a chef clearly passionate about food. Every dish we tried was fantastic — flavorful, well-presented, and memorable. The ambiance is stylish yet relaxed, and you can tell there’s heart behind the concept.

That said, the dinner service was notably slow and a bit disorganized. We waited quite a while between courses, and it seemed like the kitchen was having trouble keeping up. It’s not for lack of talent — the food speaks for itself — but rather a matter of efficiency and prep.

I genuinely want to see this restaurant succeed. With better kitchen coordination and front-of-house flow, they could easily turn tables faster without compromising quality. They deserve to be one of the best in the area — they just need the backend to catch up with the vision.

We have a home in Guayanilla, just about 20 minutes from Ponce, and we will definitely be returning.
