The Seed Eatery is a brand new healthy fast-casual restaurant situated on the Coastal Highway in sunny Rehoboth Beach. As you walk into the restaurant, you are welcomed by the relaxed and peaceful setting, a beautiful contemporary decor finished with white and green colors. The menu offers a wide variety of deliciously nutritious and healthy salad and grain bowls made in house from scratch with fresh, locally sourced ingredients. All the ingredients are gluten and dairy free, which is pretty impressive considering how delicious everything is. I had picante shrimp with arugula and marinated kale, sesame cucumbers, cherry tomatoes and crispy brussel sprouts finished with toasted pumpkin seeds and champagne vinaigrette. My fiancé tried the chimichurri steak with kale and herb potatoes, radishes, sweet potatoes and cucumber salad. Both were exquisite. We were thrilled to try something that was so healthy but filling and tasty! Other options for your hearty bowl include quinoa, herb potatoes, balsamic mushrooms, cinnamon pineapple (yum!) as well as vegan options for protein like crispy tofu and beyond meat and even vegan cheese! Carnivores will be happy with mouth-watering chimichurri steak. For dessert we tried a gluten free and dairy free peanut butter cheesecake that was decadent and creamy. We also got to sample their cold-pressed juices, which were fresh and rejuvenating. We visited Seedbol in Rehoboth Beach hoping for a good vegetarian-friendly meal. The restaurant is located on the corner of a strip mall along Coastal Highway—not the most inviting first impression. The space was somewhat clean, but nothing about the entrance or setup felt particularly welcoming.
As a vegetarian, I was drawn in by the plant-based options. The add-ons were excellent—especially flavorful and well-seasoned—which says a lot for vegetarian fare. My quinoa and tofu bowl was also tasty. I’d give the food itself a solid B, with a nice selection for health-conscious eaters.
Unfortunately, the overall experience didn’t match the quality of the food. Only two employees were working during lunchtime, and it took 5–7 minutes for my order to be prepared—meanwhile, the rest of my family was already halfway through their meals. There was no communication or courtesy item offered during the delay, which would have made the wait feel more reasonable.
The staff wasn’t impolite, but they weren’t especially warm either. A bit more hospitality and attentiveness would help. Our drinks came out 10 minutes late, and again, no one checked in or offered an update.
The checkout process was awkward—the tip prompt appeared immediately on the screen before the service was even complete. That puts pressure on customers before they’ve received anything, which isn’t a great experience.
Overall: the add-ons stood out and the food is strong for vegetarians, but the service, speed, and customer experience need real improvement. I give Seedbol 2.5 stars. With better training and staffing, it has potential to be...

First, it’s great to have dedicated vegan and vegetarian options in this area, which can be frustrating when you don’t want to eat meat and/ or you’re looking to eat something other than a traditional salad, or fried stuff. Second- it’s also hard for me to find food without onions and garlic, to which I have a severe sensitivity. Finally- the food was fresh and delicious. I ordered a bowl with lots of different options and add-ons, so I could taste a variety of their food. I had the Japanese kale, vegan egg salad, tri-colored quinoa, balsamic mushrooms, cilantro brown rice, and grown flax for some extra fiber. I also ordered the vegan chocolate cheesecake, but haven’t tried it yet (I was so excited to share with others who are vegetarian/ vegan or just want that option, I wanted to get my review in right away!) I couldn’t eat the sauce because it had garlic in it. That would be my only request- to have a sauce w/o onions and garlic, because it’s nice to pair these bowls with one. :-) food arrived very fast (I chose delivery, and paying the extra delivery fee was worth it,!if you’re familiar with high season traffic). 5 stars and more!
