The Kaya Signature Ramen was excellent, the broth is nice and creamy as a pork tonkotsu should be. The spicy hot oil also adds a delicious layer of flavor. The chasu slices were meaty and tender. I think the egg is the weak point in the dish. If the yolk was gooey the ramen would be A++.
The karaage consists of large meaty chunks of crispy chicken. They were tender and juicy, a result of using chicken thighs rather than breast meat. The sauce that comes with it isn't the traditional Japanese mayonnaise with shichimi powder, but a tangy dressing. The tangy dressing is a good contrast for fried food but I prefer the Japanese mayo instead. Either way, pairing the crispy karaage with any bowl of ramen is a must.
Pok Pok chicken ramen has a creamy chicken broth and is a good alternative for those who prefer a less rich alternative to tonkotsu broth. The slices of chicken are large, tender, and have a good flavor. The corn is also a welcome addition that breaks up the savory broth with occasional bursts of sweetness. Again, the egg is the weak point.
The Kaya and Natsu sushi rolls are both delicious. The fish is of good quality and there isn't an overabundance of rice. The rolls themselves are filling and would be a meal on their own.
The Tan Tan ramen is a "dry" variant of a Chinese style ramen. Rather than broth the Tan Tan ramen uses a mixture of protein and vegetables along with Chinese hot oil as the "broth". Our family loves ramen and this is our favorite place. I get the Classic Tonkotsu ramen with an extra egg and extra black garlic oil. My husband gets the Kaya Signature or Naruto ramen. We recommend ordering the chili bomb sauce if you like spicy. They serve it on the side. It tastes like it was made with habanero or scotch bonnet peppers, so it's very flavorful. I also love that the eggs at Kaya are perfectly soft boiled and a little runny. The sushi is good, but I wish there were more options without deep frying. I also recommend the appetizers, which have always been good as well! We have tried the lollipop shrimp, takoyaki, chashu bun, and chicken karaage.
