I love this place so much and I'm writing a review in the hope that I'm doing my part to keep this place around. Please excuse the lack of photos - I always inhale the food here as soon as it arrives. More on that below.
This is the place for real sushi lovers. I love an omakase as much as the next person, but we've been in need of a high quality, low pretension sushi place. Sushi Yume hits the mark - foodwise, service wise, and a laid back atmosphere, but still with a handful of tables (so a lightly exclusive experience).

The long version: HANDS DOWN best sushi I’ve had in the US. Not just sushi I’ve had in Austin, not just Texas, but the whole US including NY and CA. I’m not kidding y’all. We live in central austin so our usual go-to sushi restaurants are Uchi, neighborhood sushi, etc but we will be driving 30 minutes out of town to round rock to eat at sushi yume instead bc it’s that much better. Only comparable to sushi we’ve eaten in Tokyo.
I’ve had some of the best bites of my life here (Japanese uni and snow crab nigiri, aburi salmon nigiri, kinmedai nigiri, Hirame nigiri). The unagi, sake, hamachi, madai, saba nigiri were phenomenal. Every single piece of fish was of the highest quality/ freshness and perfectly prepared. A touch of garnish that brings out the best flavor of the fish without being overpowering so you can really taste the high quality of each piece of fish on top of perfectly cooked rice.
The black cod, miso soup, yellowtail roll, snow roll, ankimo were all incredible. Perfect balance of flavors. No frills here. You come here if you’re seeking high quality melt-in-your-mouth sushi.
Oh and if you have a sweet tooth, the ube brownie with ice cream and cheesecake are both amazing and even after eating them both, I couldn’t decide which one was better.

Update: We came again and still highly recommend Sushi Yume. Our opinion of the food quality increased! Very delicious, very high quality, very well made. We'll definitely keep coming back.
Highly recommend Sushi Yume. We had primarily negiri and sashimi, all of which were excellent. The fish quality was at least as good as comparably priced sushi restaurants in and around downtown Austin; the fish was a little colder than I like, but I think that's due to lower foot traffic compared to established restaurants in Austin and a surprisingly (and delightfully) quick serve time. Particular notes were the Santa Barbara uni (sea urchin) and tuna o toro (tuna belly). The uni is buttery and sweet and melt-in-your-mouth and just an all-around sublime experience—please get this. The negiri rice was well-seasoned and at a good temperature; I prefer slightly more acidity and warmer, but the rice here is definitely at a level most people would find ideal. And I really appreciated that they provide both the common faux wasabi and real wasabi without request. All of this excellence in Round Rock was surprising and welcome—easy to park, no wait time, and very friendly staff. Please, please eat here to keep them open so I can keep...
