The process isn't well marked so its a bit like Cafe Rio or Subway where they build what you request. Pick what you want to eat. Pita, Wrap or Gyro (great for grab and go airport walking and eating) OR rice bowl, salad or plate. Pick your protein. Chicken, steak, falafel, meat or portabello mushrooms for the vegetarian based eaters. Pick your toppings and fillers. Seasoned rice, Romaine lettuce, tabouleh salad, cucumber and tomato salad, red cabbage, pickled ren onion, 2 kinds of hummus, kalamata olives, AND MORE. Pick your sauce or dressings. They had TzaTziki, a greek vinaigrette, a garlic cream base, Tahini, etc. You can add feta cheese also. To round out your meal they have apples, falafel, baklava, crisps, drinks you can add on. I always get the falafel wrap - they absolutely stuff it full of a wide assortment of tasty Mediterranean food options - so much so, that they struggle to close the wrap. It literally bursts open with the first bite! It takes some care and a bunch of napkins, but eating this colossal yumminess is a fun treat.
I usually get (and highly recommend) falafel, spicy hummus, lettuce, rice, roasted veggies, pickled onions, pickled cabbage, kalamata olives, feta, and tahini sauce in my wrap. Mmm-mmm!
There is rarely a crowd here - travelers who flock to the better known American grub spots don't know what they are missing. There are usually tables available, and some are near electrical outlets for charging electronics. The pricing isn't bad either - $11 for my wrap and it's all the food you'll need.
