Bar-B-Q Republic a solid 4 Stars!

I ordered my food to go. The staff was nice and the food was priced right. However, there is some room for improvement for this restaurant to become more competitive with other popular BBQ Restaurants in San Antonio. Location was not hard to find but it was not noticeable from the IH 410 Highway.

As soon as I walked inside I was greeted by the staff and noticed a small Graduation Party being hosted. Which means its a great place to host small events.

First Impressions:

This BBQ Restaurant gave me sort of a rustic country feeling.

The restaurant was small and appears to be in starting phase as it grows to become more popular. However, there was a nice outdoor seating available and it looks as they have modernized some areas of the resteraunt while other parts are still shown that its in a starting phase.

A little note the meat is defintly cooked in house as they had it stored in a fridge that you can see to the left of the countertop. The fridge was stacked with brisket. It was nice to see a local restaurant use fresh brisket to cook with. However, I would recommend to maybe get showcase fridge that you can showcase your fresh meat to seperate you from your competitors. Most other BBQ restaurants do not have that available.

Also, I know for sure that the food is cooked fresh as I ordered the food to go and it was still warm when I arrived home. So that was an added plus!

What I Ordered:

I ordered the 1LB of Brisket and 3 Sausage Links along with one side Marconi and one side of beans.

Brisket: Brisket was ordered sliced and the meat was moist enough to basically melt in your mouth. However, as far as the taste It was not the best but it was not the worst. I would recommend to smoke the brisket in Hickory wood as the flavor may balance what the business is trying to achieve. Moreover, cut the extra fat out of the brisket as it will help render the flavor back to the meat.

Sausage: Sausauge tasted great. One of the best dishes they have.

Macaroni: The side was smaller for what I expected. However, it tasted good and was decent.

Beans: The beans reminded me of Bill Miller BBQ Beans. I would recommend to get creative and try to experiment to come out with a new flavor.

BBQ Sause: Tasted decent but I would recommend for them to make their own BBQ Sause to distinguish themselves differently. BBQ Sause looked as though it was store bought. The taste had more of a corn syrup type of texture which is why I believe it is store bought. However, I could be wrong as I did not get a full glimpse of the packaging.

My overall assessment:

This resteraunt is great but has some room to improve. I would recommend this restaurant to anyone and I will return in the future.

Great Job Bar-B-Q...

BAR B Q REPUBLIC 807 SE MILITARY DR

Worst customer service ever! Manager/owner, whoever she is has NO business in the SERVICE INDUSTRY.

It was our first time here and we were super excited to try their food. We placed our order and when the food came out, it wasn't what we had ordered. So my husband went back to the pickup window to let them know it was wrong.

This little woman came out with an attitude asking what the problem was. My husband tried explaining and was cutoff. She asked for the receipt and pointed out that we were given what we paid for. We tried explaining that, as this may be true, it's not what we ordered. She pointed the blame on us for not reviewing our order before we paid. Which, ok to some extent may have been true. But the way she approached it, was completely unacceptable. She wasn't really helpful and not really concerned about keeping our business. So my husband asked for a refund. He went up to the counter with her while I gathered our son and his things. When I got to the counter, she was placing the cash on the counter.

I asked, "so just to be clear, you're saying this is the customer 's fault?" She said, "that's not what I said" and told me to lower my voice, which was in a conventional tone and nothing more. In the same tone, I said, "ma'am you just said we should have reviewed our receipt. So doesn't that mean it's our fault?" My husband had picked up and started counting the bills. She said "take your money and leave" and walked away. There was a pile of coins on the counter, I guess thought she was being cute by giving us a bunch of dimes and instead of quarters. I pushed the coins to her side of the counter, after all, I did take a sip of the soda.

She yelled for someone to call security as we were already walking out the door. She followed us outside as we were getting in our vehicle to take a picture of our license plate. She yelled that she had me on video.

My biggest pet peeve is bad service and let me tell you, this is the worse ever! My blood was boiling. She didn't just ruin my dining experience, she ruined my whole appetite. Too bad cause the food smelled delicious when we walked in, but the service is honestly the biggest factor and this place just doesn't have it. If I could give 0 stars, I could. They don't...

Never again. The counter lady should be doing dishes, not customer service.

Third time here. My orders are never ready on time, 30 mins from when I call in to when I get there to pick up. The front counter lady is rude and has NO clue what's going on. The bus boy always has to help her understand what's going on and get the order. Dry and underweight. Scraps. SCRAPS!

The food was just alright this time. Awful portion, of scrap.

Apparently they moved after my last visit in April 2025. I see the reviews are all 1 star. Guess my first visit was a fluke of goodness.

Firstly, this was not my intended bbq spot. I'd stopped by a bbq place somewhere along this road and had a good meal about a month or two ago. Looked at maps and thought this was the place. It wasn't.

Glad it wasn't. Ordered online. I was 25 minutes later than the ready time. It wasn't ready. Their machines weren't working. Walked the dog about 10 minutes, came back and they were making me a fresh banana pudding. Waited a few more minutes. The young man taking care of the dessert was a doll. He checked with the other two girls to make sure everything was in the bag.

So glad I accidentally ordered here. I've passed by hundreds of times but they're always closed.

This was my first time and I loved it! Sampler plate, excellent. 1/4lb brisket, didn't want to put it down.

Mac and cheese was great. I ate it about 2 hours after picking up, so it was cold, also could not put down. The cream corn was delicious.

The amazing woman who made me that banana pudding, you are blessed! That was the most creative setup internally, adorable presentation and perfect taste and texture to the pudding and the fresh banana slices!! You...

Honestly very disappointed with this place, my husband met the owners at a restaurant and they said to stop by(very friendly people), so we were excited to try it. However, we were only met with disappointment. We ordered (online) a brisket sandwich, which was advertised to be in a 6 inch hoagie bun with bbq sauce, realistically we got two slices of brisket (which was okay but not worth the money) in a regular bun for 11.45$ and no bbq sauce. We also purchased a loaded Texas tater, that tasted fine but personally I’ve had better, it was also supposed to come with bbq sauce but didn’t. Along with this we ordered 2 links of sausage which ended up being a link and maybe a half. We called to ask to see if maybe they messed up by accident but the lady said they have never served their sandwich on a hoagie bun. Which is kinda crazy since there are photos on google and their website with the sandwiches made in one. We also asked about the bbq sauce and if we had to pay extra even if on the website it said it was included and she didn’t respond. Lastly, we asked about the sausage and her response was we sell 3 inch sausage only (sliced) so that’s why it didn’t look like 2 full links. Overall, it wasn’t worth the money in our opinion and we are really sad we didn’t have a good experience.

First off -outstanding service. The quality of the people who both own and work here is unmatched. At first we were thinking we were going to sit outside and we started to wipe off the stools when a sweet woman came outside and offered to wipe everything off for us. She ended up being the owner! Happened to chit-chat with the staff afterwards and everyone was just as friendly and genuine. Now the food- best, by far the BEST brisket around. No doubt. We got the 6 person meal filled with brisket, chicken, turkey. Our sides included a hearty, delicious mac and cheese, wonderful green beans, and sweet potato casserole good enough to be served at your next Thanksgiving meal. Towards the end of our meal one of the staff walked around with trays of FRESH banana pudding. There was no way we could pass those up so we snatched a few right there. We recommend it all, but because we enjoyed everything so much we’re ready to try everything else! We found this glorious, family friendly, group friendly, casual spot on our way to Corpus. Thankfully we don’t live too far so we will be back with an appetite and friends!
