WIKIPEDIA: Mexican cuisine began 9,000 years ago, 7,000 BCE, when agricultural communities such as the Maya formed, domesticating maize, creating the standard process of corn nixtamalization, and establishing their foodways. Successive waves of other Mesoamerican groups, including the Olmec, Teotihuacanos, Toltec, Huastec, Zapotec, Mixtec, Otomi, and Purépecha, brought with them their own cooking methods.
The Mexica establishment of the Aztec Empire created a multi-ethnic society where many different foodways became infused. The staples are native foods, such as corn, beans, squash, amaranth, chia, avocados, tomatoes, tomatillos, chocolate, vanilla, beetroot, agave, turkey, sweet potato, cactus, and chili pepper.

After I finished eating my Mexican Plate I took a phone call and while on the phone I see a big roach scamper on the floor near my table. This is San Antonio, and cockroaches are all over the place... not that big of a deal. A couple of minutes later I see another one drop from the ceiling tile. This one landed right near me. I told the waitress (Chacon) and she told the other waitress to get it. Between the both of them they killed and disposed of the roach. As I went to pay at register, Chacon had the gall to ask me "was everything OK (in Spanish)"? I said it was okay except for the 2 roaches that passed my table. She shrugged her shoulders and proceeded to charge me. Good luck if you choose to eat here.

My waitress wasn't in the mood, she didn't care about us at all, coffee cups empty , dirty plates on table etc. Have to chase her I would understand if the place where pack but it was empty just a couple of tables here and there.
