They have the basics down. I tried Rolando‘s after an arduous trip to Home Depot. I was hungry but I didn’t want my wife to know I ate out so I figured I would just grab a little something so that I could have lunch with her. I went with a quesadilla and added guacamole. I think the trademark of a good taco shop is not how they can make a $12 burrito but how they can make the most basic items like the quesadilla. If they are willing to spend time and energy on making a good $6 quesadilla then you know the rest of their food should be good. My quesadilla came out super fast and the service was excellent. The tortilla had bits of crispiness but was still warm and soft like a pillow. I could tell right away that the cheese wasn’t your usual, upon opening up I realize they used a cheese blend and it was perfect. The guacamole was good and spread evenly across the entire quesadilla, some places just put it on the side. The hot sauce was good as well. The place is a classic San Diego drive-through taco shop with a walk up window. No indoor seating by a generous amount of tables outside with shade. Read moreGot the carnitas burrito. Not good. It was humongous, but mediocre at best. Carnitas were really dry and ingredients were not scattered throughout. It was 3 bites of beans only, 3 bites of cheese only (because I paid extra for the cheese) 3 bites of rice followed by lots of chewing of dry meat. Carnitas resembles if you bought a dehydrator and wanted to make jerky and tested it halfway through the dry time. It was huge. Feed a couple or family huge. So huge that if you bought one on the way to the airport you better buy an extra seat huge. Take a nap afterwards huge.
I am disappointed in myself for finishing this gargantuan pile of near jerky.
