Elote. Simple, delicious street food. Corn, mayonnaise, tahin, and cotija cheese. Very simple, anyone can make it.

So when I bit into this one, I was immediately taken back by how hard one can fail at making a simple, inexpensive dish.

Overcooked corn (mushy), flooded with excess liquid. Tahin and cotija are not mixed in but just left as a topping. Cotija cheese has an almost spongey texture. This also gives the dish a way saltier taste than it should.

Could not finish. Had to throw away. I couldn't recommend going back there for any other reason, especially when a dish as simple as this, is made to perfection by a man in his truck only a block...
