Wild Thistle Cafe — Restaurant in Santaquin

I couldn't be more excited that this cafe is open 😍. We stopped by for Mother's Day breakfast. My husband got an iced Cacao Latte. The cacao comes from a friend of one of the owners, straight from Guatemala. The latte was delicious. The espresso beans were high quality. I ordered a hot chai latte with maple syrup, and it was fantastic. The chai they use is so much better than chain coffee shops (no overly sweet). We also got egg sandwiches on sourdough instead of bagels, and my husband and kids loved them! The bacon on the sandwiches was thick and flavorful. I ordered the Ricotta Toast, and it was even better than I'd expected. Just a note, the ricotta toast comes with a spicy honey, but don't let that deter you. The spicy from the honey combined with the sweetness of the honey and the apples...it was divine!

10/10 can't recommend enough.

I’m not sure five stars even does this place justice. The moment you step through the door, you’re greeted with a vibrant yet calming atmosphere — relaxing, positive, and perfectly balanced. The staff behind the counter go above and beyond; I’ve never had someone ask how I like my coffee before making it. That simple gesture stood out and showed how much they care about the craft.

The coffee itself? Absolutely unmatched. Made with precision, passion, and attention to detail — it’s easily the best cup I’ve ever had. Wild Thistle Café doesn’t just serve coffee; it sets the standard for what a coffee shop experience should be.

Stopped in with my spouse after a morning walk and absolutely loved it here! We got the Rosemary Revival and Forest Floor (both iced), and the quality was excellent. The coffee was smooth and well-balanced—flavored syrups added just the right touch without overwhelming the drink. The Rosemary Revival might be my new favorite! The vibe is cozy and moody in the best way—perfect for relaxing or catching up with a friend. Service was fast and genuinely friendly.
