My mother and I have been loyal patrons of this restaurant for the past 2 years. We have ordered the Enchiladas Cancun (with a few variations of our own) so many times that the chef recognizes our order and waves to us when he see us.
We have brought friends and family to Maracas to share our formerly favorite dining facility.
Previously we would have given a 5 star review, but after yesterday's experience we rate it a 2 star review.
My mother and I went to Maracas yesterday and were terribly disappointed in our experience. Our server was less than attentive. My horchata had been empty long enough that I was ready to get up and find her to ask for a refill. She did bring a new, but much smaller glass of horchata and left the dirty one on the table. She did not come back once to ask how our meal was. If she had we would have told her how disappointed we were.
The white sauce was too spicy and was more like water than the thick, well flavored white sauce we were used to. The guacamole at Maracas has been my favorite. Yesterday it was very spicy. The rice was spicy. (My mother and I have a food intolerance to black pepper and spices.) The enchiladas were mediocre at best. We both were ill in the evening due to change in the ingredients.
When we questioned our server if there was a new chef she told us she would inquire. I explained that the meal was not even close to what we were used to: in texture, taste, etc. Nothing more was said even when she gave us the bill. As we were walking out I made a point of asking her what she had learned. She looked at the floor and would not make eye contact. She admitted that "yes, there was a new chef". We felt it was rude that she had not given us an answer to our inquiry.

Read moreWe liked this place. It is the best Mexican place in Santaquin. There are better places in the valley, however, they are quite far from town.
We went with a large group of 5 adults and 6 kids. They didn't seem to be put off by the size of our group. We had one waitress who took care of us. She did a great job taking care of everyone. She was not put out when we asked for the check to be split amongst the family groups.
She charged the obligatory tip for large groups. But it didn't seem sufficient so i added a little extra to the tip because she was working pretty hard keeping everyone's drinks filled, more chips, more salsa, more napkins, some extra plates. She did well keeping on top of it all.
The food was solid. Everyone left full and satisfied. My son and his wife shared the Molcajete. It looked really good. I was a little jealous.
All of the kids were happy with the kid's menu. They all got drinks with their meals. Kids like their food simple. Three of the little guys got a simple quesadilla with a side of French fries.

We had ordered our food and then our waitress avoided us. We sat there for 45 minutes without a drink refill. We tried multiple times to get our waitress's attention, and she would not come over to us. We finally had to all waive our hands in the air and practically yell, "excuse us," for her to come back over. We asked her where our food was at, and she responds, "I know right? I can't believe it." Uh what?! You should know where our food is! If she forget to put in our order, just tell us it's going to take some time and you made a mistake. Like what the heck?! We told her we had seen several parties that arrived after us already get their food. She said she would check on where the food was. She came back and told us that they were bringing it out. We waited 10 more minutes just sitting there. She didn't come back. So we got up and walked out. Seriously what kind of operation is that? Every time we've gone, the food has taken forever.
