EDIT TO 5 STARS Okay I do stand by my whimsical crash out review of the chimchanga Like yes I do believe it was not issued an ICJ warrant for trying to murder me with cholesterol and it should have been And that was disappointing HOWEVER Just got an absolutely outstanding Carne Quesadilla Unreasonably good actually And like my original review stated The shredded beef was also very very good Was my light skin chimi a fluke? Or a fundamental issue with the recipe (JUST DEEP FRY IT PLEASE LIKE REALLY GET UP INTO THE FRYERS GUTS WITH THAT CHIMI) I decided especially after this quesadilla It really doesn't matter because everything tastes really good AND AND AND AND This is the important part to me from my last two times there It feels like usually in Seattle you get used to paying just a little bit more For a little bit less If you're new here it can be frustrating But you get used to it being just How things are Until you really don't notice it But here Both times And I assume every time I got really really flavorful food AND AND AND AND A little bit more than I was expecting For example My quesadilla came with guac My chimi was full to bursting with meat and cheese Sure sometimes you hit up a spot that gives you absolutely massive portions Of some like Definitely tasty But still Obviously not like super high quality food You become used to making compromises The portions here are generous and very filling If they're not aggressively large it's because They're not trying to make up for something As a gay man going to a gay Mexican restaurant I can sincerely appreciate That these people are not size queens Both times I felt like I got more than I was expecting both in terms of quality and quantity And felt I had to make no compromises And felt like I got a real bargain for what I paid And the vibe was the people here were happy to do that for me And had nothing to prove It's confident food Elevated but not extra But also they give you extra Make sure they pack their meat in To your tortilla They really deserve to be here I figure Doing something I've not encountered in a long while Quietly just doing the right thing for you And feel like If youre happy they're happy and happy to be there So I'm happy Also the wait staff is really cute in a boy-next-door kinda way I like that as well just a bonus really

ORIGINAL WHIMSICAL CRASHOUT POST I have beef with the chimchanga. To be clear I ordered a beef chimchanga. Just checked my order receipt, opened the fridge to make sure. Double triple quadruple take. Before I offer up criticism. To be clear my beef chimchanga was loaded with beef. Good beef. Tasty. Flavorful. Tender. Loaded with cheese as well. There was a noticeable cheese pull. I was as wet as my chimchanga seeing that. Full throttle anticipation. Portion sizes, generous. Thoughtful execution. Charming bartender. So what's my beef with my beef chimchanga? Didn't seem fried More like baked Just checked the fridge Count it my fifth take to be certain Defo absolutely pale spots not just a spot Most the tortilla A chimchanga should be a war crime against heart health That's in it's nature like the scorpion on the frog's back Whoops I can't help it I'm exactly a million calories Have to clog your arteries haha When the white girls at your table say "omg let's be bad" Even they won't deign to order a chimchanga It's too far Too obscene Should be anyways Mine was not Sixth time I just checked The vibe on the chimchanga was Rachel Ray "We have chimchangas at home" You do not No one does Without a deep deep fryer I'm having quite literally the worst two weeks of my life And as the main character of planet Earth If anyone deserved the skankiest most golden brown blistered skin tortilla daring me to give in to a life on the sofa as a total lardo It was me clearly And the fillings The portions The salsa Everything else correct Nearly perfect Except It was not...

I shouldn't say this as I consider this a great secret: I eat here before and after Seahawks/Sounders/Mariners games then jump on the light rail to the stadium. I have even walked to the stadiums from here. As for the food, holy smokes: it is great. I have eaten here about 30 times and never been disappointed. This morning I had the chorizo torta for brunch. The roll was so soft; it melted in my mouth. And the flavor of the chorizo: sublime. The owner, Oscar, was in today and came out to greet us and check in on our order. So friendly and is committed to making his small business thrive. The wait staff checked in quickly and got drinks going. On our visit after the Seahawks blew a lead to the Vikings last week, I had a margarita....Can you say: everyone at the bar getting tipsy? These are good! Lots of flavors...not too sweet. The venue is brand new; the menu did not change much from their past location which closed due to the pandemic. The decor in the new location is very comforting. The restaurant got a small grant to have a mural painted on one wall: very classy. The restaurant has lots of big windows to give the restaurant a big feel, i.e. not squished....

This place is great. I arrived about 9:30 pm, and the waiter informed me when he first came to my table with chips and salsa, that there was only a half hour of service for the day, but he was glad I stopped in and would be happy to serve me the remaining time they were open. I promptly ordered a margarita which he returned with shortly and I placed my order for the Steak Ranchero. The meal came out in less than 10 minutes and he offered another margarita to which I agreed. The steak Ranchero was very good. The meat tender and flavorful, spicy with a bit of a kick, but not hot to the point where that's the only sensation brought forth. The rice was fluffy and the beans firm and tasty. Wonderful cheap Mexican breakfast. Can't get much better than that combination. I have been here twice and I have gotten the chilequiles and the huevos de mexicana. Both were wonderful though I definitely like the chilequiles the best. Only complaint is they don't give you enough tortillas for the huevos. Staff are extremely nice and the inside of the cafe is very nice. I love me a good mural. They have this one hot sauce that is a strange green tealish color. Don't be put off, its delicious and spicy as hell. Love this cafe, you should go here.

Went to Baja Bistro for the first time! Ordered their steak tacos and huevos rancheros! Very delicious and fresh tasting!!! The atmosphere was very pleasant and cozy! Also, outstanding customer service!!! Highly recommended!!! Love love love it 😍!!!

Went to Baja Bistro for the first time! Ordered their steak tacos and huevos rancheros! Very delicious and fresh tasting!!! The atmosphere was very pleasant and cozy! Also, outstanding customer service!!! Highly recommended!!! Love love love it 😍!!!
